Hearty Tuna Casserole

This was a huge hit! I added a big handful of sliced mushrooms I needed to use up and also a can of diced green chiles. I layered the tomatoes on top of the zucchini before I added the cheese. Next time I need to take something to a potluck picnic, I plan on making a batch without the zucchini, tomatoes and cheese and chilling it for a tuna-mac salad. Yummy!

Mexican Bean Burgers

These are awesome! I used to get a delicious black bean burger at a restaurant in OKC and have been looking for an equivalent/replacement here at home. Finally found it! (Happy dance!) I did make a few modifications - based on others recommendations and my personal taste. First - I used black beans (which I drained and rinsed really well.) Then I chopped the carrots and sauteed them w/ the chopped onions, garlic and some cumin - and I replaced the bell pepper w/ chopped green chili. And threw in a few squirts of Tabasco Chipotle sauce. I also suggest starting w/ 1/2 cup of salsa at the end and building from there to the right consistency. Sear the burgers and then drop the temp in the pan and cook slowly to cook all the way through. The flavor is fantastic and my husband and I loved it. 7 year old stepdaughter liked it "a whole lot." We followed the recommended serving suggestions and really enjoyed dinner tonight! Thanks Valerie!

Fava Bean Breakfast Spread

This is fantastic! My husband is addicted. The only change I made was to leave out the parsley and puree. We ate it all in a couple of days, so I went right back out to the store today and no fava beans... So I got "faba" beans. Sounds similar, so I rationalized. It's still a lovely bean spread, but the favas really make it!

Cranberry Chutney I

This is fantastic! And it makes the whole house smell deliceous! I made it specifically to serve it over B's Cordon Bleu Bundles (from Allrecipes!) and it was my family's favorite meal EVER! And would be wonderful with so many different things.

Texican Squash

This is easy and absolutely fantastic! Yellow squash was out of season, so I used zucchini and it worked great. My 7 year old stepdaughter wasn't crazy about the squash, but said if I made it with broccoli it would be "perfect!" I'm going to give it a try - seems like lots of different veggies would work! Thank you!

Taqueria Style Tacos - Carne Asada

This recipe is fantastic! Authentic and deliceous! Everybody loves it - young and old. Lots of work, but worth every minute. I did replace the roasted veggie puree with salsa on a camping trip and it was quite enjoyable, but for the "real deal" take the time and do it right. And don't be afraid to marinade overnight! Thank you Stanicks!
