Downeast Maine Pumpkin Bread

I have to say this was a very easy and very tasty recipe. I did end up tweaking it to my tastes but I realize that not everyone likes the same thing and most of the time you have to tweak something to love it, which is why I still gave it five stars. I added about 1/4th cup more sugar and doubled the spices. And for those of you that are having trouble getting it to set and bake right, know that you stir it till the flour is JUST incorporated, over stirring will make it hard, and under stirring will make it inconsistent and not bake in the center. And also make sure you are using a good brand of pumpkin, and not pumpkin pie filling for a good pumpkin flavor.
