About this Cook
I am a writer, a wife, a mother and a grandmother.
My favorite things to cook
My kids like my hamburger stroganoff. I like finding new quinoa recipes since one of my grandsons is allergic to rice. I bake cupcakes galore.
My favorite family cooking traditions
Swedish Stuffed dumplings, Irish stew
My cooking triumphs
Honorable mention in a Pace cooking contest with an original recipe I call enchilasgna.
My cooking tragedies
The first time I cooked a Turkey I did it on a BBQ spit and I left the neck in. I couldn't figure out why it took so long to get done!

Easy Corn Pudding
I've been making this recipe for years. I do not drain the kernal corn. I usually make a double batch to feed everyone and I've even made it in a crock pot and it turned out perfectly. The corn muffin mix is dumped in directly from the box, this is the small size, I use Jiffy brand. I forgot the sour cream once and most people didn't mind it, although it really is better and creamier with it. I also have added sauteed onions and grated cheddar cheese - about 1/2 cup for a single recipe. Those additions were great too. I find it heard to botch this recipe. It's a good stand by, easy and inexpensive. If you like corn pudding or scalloped corn you should try this.

Sopapilla Cheesecake Pie
Very good. I did leave the honey off and served it on the side for people to drizzle on if they wanted it. I loved them without it. This is such an easy recipe to make for as good as it is. I put in double the cinnamon since we love cinnamon.
