Janet's Rich Banana Bread

This bread is AMAZING!! I made a few minor additions- a teensy bit of nutmeg, and clove. A REAL TEENSY BIT. Otherwise, I didn't change a thing! I highly recommend this recipe.

Penne and Vodka Sauce

This is an excellent base recipe! I took advice in other reviews and added sautéed onion garlic and mushrooms. I also sautéed shrimp and used fresh grated Parmesan! I'll definitely make this again. And by the way. No need to use gray goose vodka. Triple olives worked fine and I'd bet Smirnoff would too!

Orzo with Parmesan and Basil

Excellent base recipe but I made a few modifications. Two chicken breasts coated with Italian breadcrumbs and sautéed. A little less Parmesan to prevent dryness. Add almond slivers, diced red bell pepper and red onion, and rehydrated sun dried tomatoes.

Chicken Tortilla Soup I

This is a good base recipe but like many other reviewers, I had to make several modifications which is why I can't rate it higher than 3. Here are some changes. Omit oregano. Add 2 tsp cumin. Double the chili powder, corn, diced green chilis and black beans. Add salt and pepper and dash of cayenne to taste. Shred chicken instead of cubing. Cook at least an hour before serving. Day two is even better so good to make a day before you plan to serve.
