Tofu Salad

This was very good but I made a few changes. I followed one user's suggestion to drain the tofu by pressing and then to cube and freeze overnight followed by thawing and pan frying the next day. I had chili garlic sauce in my fridge so I used that instead of sweet chili sauce. I also left the ginger (my Husband doesn't like it) and seasame oil (my daughter is alergic to sesame) out of the marinade. I used olive oil instead of sesame oil. I also tripled the marinade. I couldn't find snow peas so I left them out. I used a package of broccoli slaw instead of cabbage. I added julienned carrot, yellow and orange bell peppers to the broccoli slaw. I also left out the peanuts because my daughter is alergic to them. With the changes it was fantastic.

Quinoa with Veggies

This was very good. I used the package instructions for cooking the quinoa. For vegetables I used green onions, broccoli, cauliflower, green beans and white mushrooms. I stir fried the vegetables in my wok. Myself, my two younger kids (7 & 9) and my husband loved this. Only my 12 year old daughter didn't like this. She ate the vegetables but not the quinoa.

Wildfire Pulled Pork Sandwiches

This was very good. The whole family loved it. I made a few changes. I couldn't fine Bob Evans Wildfire BBQ sauce. Perhaps it is not sold in Western Canada. My kids don't like things too spicy anyway so I used Kraft Original BBQ Sauce. I also used 2 cups of BBQ sauce rather than the 1 cup called for. I omitted the red pepper but added 1 small minced yellow onion, 3 minced garlic cloves and a pinch of salt and pepper. I also increased the water to 1/2 cup from the 1/4 cup called for. With the changes I made this was loved by all members of my family.

Chicken Quesadillas

This was very good. My kids all liked it. I didn't use packaged fajita seasoning though. I used my own marinade of juice of 2 limes, juice of 1 orange, 2 minced cloves of garlic, 2 tbsp olive oil, 1 tbsp chopped cilantro, 1 tsp cumin and 1 tsp salt. I marinated the chicken for about 4 hours and then grilled it. I reserved some of the marinade and sauted the bell peppers and onions in it. I used a red onion. I only used shredded Cheddar and I left out the bacon bits. I would make this again with these changes.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

This was yummy. I made just one change. I used skim milk instead of whipping cream to cut down on fat. It made the sauce thin but it was still very tasty.

Beef and Bean Chimichangas

I gave this 3 stars because it was incredibly salty. I drank no less than 8 glasses of water after eating this. It was the beans. Over 1100 mg sodium per serving. YIKES! I will look for low sodium beans next time.

Chicken Milano

This was very good. I substituted skim milk for the heavy cream to cut down on fat. I also substitued olive oil for the butter. The sauce was maybe a little thinner than it would have been had I followed the recipe exactly but it was still very tasty and healthier.

Zippy Summer Shrimp

I made this with several changes. I cut the red pepper flakes to 1/4 tsp, the paprika to 1/2 tsp and the lemon juice to 2 tbsp. I also added 3/4 cup of white wine. I cooked the garlic in the olive oil for a few minutues then added the prawns and cooked until they were pink. I them removed the prawns from the pan and placed in a covererd bowl. I then added the lemon juice, red pepper flakes, paprika and wine to the pan, brought to a boil and reduced by about half (took about 5-7 minutes). After reduction I added the prawns back to the pan along with the basil. I cooked for a few minutes until the prawns were heated through. I then tossed the prawn mixture in the pan with cooked pasta, poured a little olive oil over top and tossed again. I served this with grated parmesan cheese. The whole family liked it prepared this way.

Cinnamon Rolls I

These are excellent. However I found when I made them overnight by leaving them in the fridge to rise it was difficult to bake the inside before overbaking the outside. The inside was doughy while the outside was brown. The second time I made them overnight I let the pan warm to room temperature before baking. The results were better but the buns still had some doughy parts. To make a long story short, I wouldn't make these overnight again. I would just make them all at once with the 45 minute rise at room temperature. This method has had the best results for me.

Crispy Rosemary Chicken and Fries

I followed Kenna's June 15 suggestion and used chicken breasts cut in strips. I put the chicken and potatoes in a bowl with the fresh rosemary and oregano and garlic powder. I only used a 1/4 cup of olive oil. I tossed everything together and used Kenna's cooking instructions. Potatoes only for 1/2 hour, add the chicken and cook for the remaining 1/2 hour. The whole family liked this.

Fire-Roasted Tomato and Spinach Pasta

I made this with a few changes. I could not find fire roasted tomatoes in a can so I made "Roasted Roma Tomatoes and Garlic" from this site. I then diced the roasted tomatoes. I also used about 5 cloves of the roasted garlic rather than 3 fresh cloves. I also added 3 tbsp of minced yellow onion and 1 tbsp of minced fresh basil. Also, instead of creamed spinach I used 1 cup of fresh minced spinach. With these changes it was very good.

Angel Hair Pasta with Shrimp and Basil

This was very good. All three of my kids liked it which is saying something. I made a few minor changes. I increased the garlic to about 1 tablespoon. I used three large cloves of garlic. I also added about 1/2 teaspoon of italian seasoning as per another reviewer's suggestion. Also, instead of using cans of diced tomatoes I peeled, seeded and diced 15 small roma tomatoes.

Brooklyn Girl's Penne Arrabiata

I found that the coating on the chicken would not stay on, the temperature for the stove was too high and the cooking time for the chicken was too long. I cooked my chicken on medium heat for five minutes. When I went to turn it over I found that the coating that was left was burned to . I ended up throwing the whole thing out and ordering pizza. I would not attempt this again.

Gourmet Chicken Sandwich

This was wonderful. My whole family liked it. Even the kids (ages 6, 8 and 11). We had it warm and added sliced tomato and lettuce to the top of the chicken once it was cooked. I used Homemade Focaccia Bread from this site for the bread.
