Dump Cake I

Reviewed: Jan. 18, 2014
I make a variation of this...we use different kinds of pie filling I like it with pineapple and blueberry. But my favorite is Blueberry and Apple Pie filling and no pineapple butter recipe cake from Duncan Hines. It is to total indulgence no matter what...around here we like to serve it as an ice cream topping straight out of the oven!!!!!

Soft Garlic Parmesan Breadsticks

Reviewed: Nov. 22, 2013
I only had regular yeast and followed the directions the same as stated and they still turned out really good! I only made 2 changes besides the yeast because when I opened the fridge I found I was low on grated parm...so I had a little bit of shredded parm and added a little shredded mozz with it and they still turned out, I may even add all mozz and a little more next time or sprinkle some on top for the last few minutes of baking. My one complaint is it needed more garlic...even after I added garlic powder to the butter you still barely tasted it...and I used fresh pressed garlic generously closer to 1 1/2 Tblsp.

Buttermilk Pancakes II

Very Very Good! Wouldn't change a thing! Added Blueberries...just because I love blueberry pancakes! Also I changed it to 2 servings and still got 4 huge pancakes so you may want to keep this in mind!

Overnight Blueberry French Toast

Reviewed: Aug. 2, 2013
Not my family's cup of tea as they say...I think we are just traditionalists when it comes to french toast maybe. I made a half recipe...the bottom was like rubbery eggs(almost too done by the time it was cooked all the way) and the top was dry and crunchy...I even used French bread like suggested! So disappointed was looking so forward to it too! :(

Mom's Zucchini Bread

Reviewed: Jul. 17, 2013
I changed a couple things but the thing I didn't like would have made a difference...way too much cinnamon for my liking in zucchini bread...and I love cinnamon! It was super moist even though I used half whole wheat flour and half applesauce and half vanilla greek yogurt instead of the oil. I cooked the whole recipe in a fluted pan(actually a Pampered Chef Stone one) and it was perfect!

Best Whole Wheat Chocolate Chippers

I will probably sub a little white flour next time they were a little too cakey for me. I halved the chocolate chips and added the pecans as chopped great addition.

Apple Oatmeal Cookies II

Reviewed: Jun. 19, 2013
OK I take some of the blame that is why there are 2 stars for the good idea...I used raspberry flavored applesauce thinking that might help with the blandness and put a heaping teaspoon of cinnamon(its good for no need to skimp)still so very bland. They were so dry they got stuck on the way down! This maybe from skipping the butter...but they didn't' even flatten out at all they stayed the shape I put them in the oven?

Oatmeal Peanut Butter Cookies

Reviewed: Jun. 10, 2013
My very picky 6 year old's exact words were "Mommy I love 'em!!" Because I don't believe in giving 5 stars to a recipe I changed it gets 4 stars.... I read about 20 reviews before I started and about half said it needed more peanut butter so i added an extra half cup of peanut butter. I omitted the shortning I just don't like the texture it can give things and put unsweetened applesauce in it instead(this will also lower the fat and keep them soft). I put a 1/4 cup less of each sugar and ALWAYS use dark brown sugar. When putting in the flour I sifted together 1 cup of all purpose with 1/2 cup of whole wheat(to make it a little healthier...next time I will make it 3/4 of each. Definitely a keeper, thank you so much for posting this recipe! I forgot...omit the salt...I used salted butter and that was the perfect amount of saltiness!

Apple Cookies

Reviewed: Jun. 2, 2013
Would be 5 stars if I hadn't changed it a bit...I added a tsp of cinnamon had no walnuts and used craisins instead of raisins and reduced to 1 cup of dark brown sugar. I also added 2 tbls of flaxseed meal soaked in 4 tbls of water for 5 minutes to add to the nutrition. I think the original recipe would have been good but a tad bland with no spice...also I can't find the icing recipe...but they are wonderful without!

Savory Crescent Chicken

Reviewed: May 22, 2013
Made these lots of times but I like it better with green onions rather than a regular cooking onion...and then put a clove of garlic in it too...also I have never added the croutons...I don't see a need for them.

Creamy White Chili

Reviewed: May 18, 2013
Really good...I would give it 5 stars but I made some changes so it really isn't the same recipe. I did one can of the white beans and one can of black beans...gave it more texture and flavor variety...great northern beans can be mushy. Also I let everyone put what they wanted for an amount of sour cream instead of mixing it in. We also added shredded cheese individually. It was a little on the spicy side for my family so next time only one can of chilies and probably cut back on the cayenne by half...my kids are still little. Also we liked eating the leftovers with the scoop kind of tortilla chips...the kids thought it was great!

Blueberry Flavored Waffles

Reviewed: May 4, 2013
They were edible...but for some reason all I tasted was the egg? I switched half of the flour for whole wheat flour and added 2 Tblsp of flaxseed meal(soaked in 2Tblsp of water) which should have added more flavor and even a tsp of cinnamon...I just can't figure it out...I did make the mistake of not thawing my blueberries...this made a mess in my iron...oops. I think they just weren't my families cup of tea!

Buttermilk Strawberry Shortcake

Reviewed: Apr. 23, 2013
I liked it but it wasn't exactly what I was looking for. I love the bisquick shortcake but I am trying to get away from prepared foods and this one sounded like it might come close. It does have good flavor just a different texture than what I was hoping for but that just might be it coming from scratch. This is my shortcake recipe until I find something I like better!

One Bowl Chocolate Cake III

Reviewed: Apr. 22, 2013
Definitely will not be making this again. I added 2 tablesspoons of flaxseed soaked in 2 tablespoons of water and I subbed applesauce for the oil...which I have done a million times and can never tell the difference. And subbed 1/4 cup of whole wheat flour for the white flour...which could have made it so dense. It was VERY dense and had very little chocolate flavor...the frosting I put on it over powered any chocolate flavor in the cake and I was very generous with the cocoa powder and short on the sugar because we don't like things over sweet.

Hearty Oatmeal Pancakes

Reviewed: Mar. 18, 2013
This is our new pancake recipe...we like that they are more like dessert when we put blueberries and syrup on them. The only changes were to adjust for the half recipe...I put a full tsp of baking soda and baking powder in and a full 2 eggs. Also I like cinnamon so I put a little extra and a full tsp of vanilla. The batter was a little thick so I added extra milk about 1/4 cup more I think...I am more of and eye type cook! :) P.S. If you forget to soak the oats just let the batter sit for a little while before you start cooking. And if you grind up the oats first they don't need to soak as long! Good Luck!
