Antojitos Minis
I sauteed in olive oil some onions, the red peppers, and jalapeno peppers, then added diced tomatoes with green chilis, black beans and mexican corn. Mixed in a little cheese to bind it, filled the cups, and put a little more cheese on top. Very good, but messy. Think I'll try the mini-muffin cups to make it a 1-bite snack vs. 3-4.
