I followed this recipe to a T and it turned out great! It was my first time making guacamole and this recipe was easy to follow. I was somewhat nervous about being able to find ripe avocados that were ready-to-use; I haven't had much luck in the avocado department. However I did a little research beforehand and basically the way to tell if the avocado is ripe is my squeezing it. It'll be distinctly "softer"/easier to squeeze than the others. At least that's how I figured it out. :)

Calabacitas con Elote (Zucchini with Corn)
As another reviewer said: this is a "good solid dish". However, the reason why it is four stars and not five is that it could use a little jazz. The flavors of the vegetables together worked nicely, but overall it seemed a bit bland. I will definitely make this dish again but I will probably pair it with a spicier dish such as the "Spicy Garlic Lime Chicken" recipe, which is also listed on this site. That way the "blandness" of this dish will even out with all the spices of that one. ALSO, I didn't use the cheese because we didn't have any. Maybe that made a difference but I don't know; I am not a huge fan of cheese in general.

Spicy Garlic Lime Chicken
This recipe is now a staple in my kitchen, and I'm not not even a huge fan of meat. However I have made a few changes to the spice mixtures (as suggested by other reviewers). First of all, I am not hesitant to double or triple all of the spices except for the cayenne pepper. The extra spices in the juice that we serve over the chicken and corn are just a bonus. Also we sauteed garlic and onion with the chicken and omit the garlic powder at the end (since we are already using garlic). This pairs very well with corn.
