Spicy Dorito® Taco Salad

We have been making this for 38 years. Our recipe calls for Taco Flavored Doritos and Taco FLAVORED grated cheese (must say flavored, it is different from Taco Cheese) and bottled Creamy Italian salad dressing (the creamy whitish kind) Kroger Brand is what we use. We also use an envelope of taco seasoning and make make the taco meat according to package directions. Hint- Do not add hot meat to the salad, let it cool first. Mix the taco chips and dressing write before serving or it gets soggy. I omit the jalapeno peppers. Not everyone likes it hot. Every party we go to, we are asked to make this. I know some people use Western or Catalina Dressing, but that is too sweet. The tart Creamy Italian is the key ingredient to this salad.

Quick and Easy Sauteed Spinach

Way too much garlic salt. I cut down to 1/2 tsp and it still was a bit too much. Garlic powder or fresh garlic would be a better choice and then add just a pinch of salt

Pumpkin Cake II

Pretty easy cake and had good results. I left out the water and reduced the oil to 1/4 cup and added 1/4 cup unsweetened applesauce. I added 1/2 tsp nutmeg. I wish I would have reduced the sugar, because this was too sweet for me and I generally like things sweet. I mixed all the ingredients EXCEPT the cake mix until smooth, I added the cake mix last, mixing just until the dry ingredients are incorporated. Over mixing will definitely produce a heavy/dense cake.The addition of a little cloves and ginger would really make this cake shine. Or just use pumpkin pie spice instead. I will make this again, but with less sugar.

Skillet Fried Corn

I liked this, but with some changes. I took other suggestions. I removed the cooked bacon and drained and reserved the bacon fat. I cooked the green pepper and onion in 1 tbs of the fat. When the veggies were tender I add the corn and one more tbsp of bacon fat. I added salt and pepper and a small amount of red pepper flakes. The bacon was added back into pan at the very end. I brought this to a potluck dinner and everyone gobbled it up, including the kids.

Easy Meatloaf

It would have been bland if I hadn't added 1 TBSP worcestershire. I sauteed the onion and a little garlic in some olive oil. It needs about 1 1/2 tsp salt. I used straight ketchup on top. I didn't want it too sweet.

Sausage Pasta

So easy!! I only had mild Italian sausage so I think the addition of red pepper flakes would have added some spiciness, but overall, I thought it was very good. I made sure I pressed some of the juice out of the spinach so the dish wouldn't be watery. I used Bob Evans Italian Sausage which has no grease to drain, so olive oil is a must when cooking the sausage. I had some fresh basil on hand, so I used that. I think fresh Parmesan cheese would have been wonderful, but all I had was Kraft in the jar.This is a good meal to make when you come home from work tired and you don't feel like cooking. You can serve this to company with some Italian bread and you have a winner.

Easy Slow Cooker Ribs

Let me begin by saying that I am not a big fan of slow cooker ribs, but I gave this a try. Even though I didn't absolutely love it, I liked the taste and the ease of this recipe. I could only find Chipolte Chili Powder and not Chipolte Seasoning, which I am sure has more to it than just Chipolte peppers. I made the sauce using one teaspoon of the chipolte chili powder and tasted it before adding the regular chili powder. I felt the there was enough heat and smokiness from the chipolte, that I did not add the additional chili powder. If you like more kick in your sauce add the regular chili powder. I used St. Louis style ribs and cooked for 8 hours (my pot runs hot). Good summertime recipe that doesn't heat up the house. I would make again because of the simplicity of this recipe.

I thought 1/2 cup sugar was way too much, so I cut the sugar down to 1 1/ 2 tbsp sugar and it was mildly sweet. I would not use more that 2 tbsp. My husband hates sweet sauces and I lean toward a little sweetness. Very easy recipe. I picked this one because I had tomato juice I need to use up. I was very happy with the result.

Debdoozie's Blue Ribbon Chili

The only change I made was that I used one envelope of chili seasoning mix (1 1/2 tbsp) instead of the 4 tbsp. I prefer a mild chili and one envelope was perfect. Adding more would add way too much sodium (1 envelope has 420mg). I had Mild Salsa on hand, so that is what I used. You could always make this hotter by using Hot Salsa or add chili powder. I will make this again.
