Sour Cream Cheese Casserole

This is really a nice, easy one-dish recipe for a family dinner at home. Like another reviewer, I remember my mom making something similar to this. For the most part, I prepared this dish as directed, but made some minor changes. I steamed some broccoli and added to the recipe when I did the chicken. After I poured the mixture into the oven proof dish, I added a layer of grated cheese, a layer of breadcrumbs and then a few pats of butter over the top. I also increased the cook time to 30 minutes to make sure it was nice and hot and just let the ingredients simmer well. I served it over Angel Hair Pasta and it was loved by the entire family. My husband took the left overs to work then next day. I will definetly be making this one again.

Chicken Parmigiana

Okay ~ I followed the directions to the "T" but was not as pleased with the results as so many others were. I, like others, found the chicken to be too dried out. Next time I will either use Chicken strips/nuggets are cut chicken breasts down to smaller sizes. Other than that, I thought the dish was a very good staple and easy quick dinner. I will definetly try it again. I made spaghetti noodles and extra sauce and served the Chicken Parmigiana on top of this.

Chris' Bay Area Burger

I try not to rate 5 stars unless it really is a great recipe. This recipe definetly got a 5 STAR. The recipe ingredients did not really appeal to me initially, but I made it exactly how it was described, but I did add some extra garlic since we are garlic lovers. They turned out GREAT! A really good grilled burger that is for sure! In the past two weeks I have made them twice and both times I received grand reviews. I even caught my husband eating a second burger one night about an hour after dinner and asked him if he was eating because he was hungry or because he liked the burgers...He said because he like the burgers, so that was a confirmation that this is a keeper. We look forward to many grilled burgers this summer!

Old Fashioned Onion Rings

YUMMY ~ This Onion Ring Recipe is definetly a keeper. I have made several onion ring recipes over the past year and this one definetly is Number One in my book. I followed the directions exactly and they turned out wonderful. I cooked them in my Fry Daddy and they only took about 1 minute until they were golden brown. Next time, I might add a pinch of pepper and little bit more salt, but other than that, the recipe was great!

S'mores

What can I say...I have made it twice in the last week by request. The kids love it. I even had the "Picky" eater ask to give the recipe for his mom. The only change I make is to make more of the Graham Cracker mix...It seems like when I get to the top there is not enough to cover the entire top, so I just add another cup of graham cracker crumbs/butter. This is really a nice kiddy dessert recipe. Great for sleepovers.

Barbecued Korean Ribs

If I could have given this more stars, I would have. This is a wonderful recipe. I followed the directions to a "T" with the exception of beef short ribs, I used Beef Boneless Ribs with out bones. I used a gas grill on 350 degrees and turned them every three minutes four times (make sure that you get the criss-cross lines :-) and they turned out better than I expected. We will be having this again!

Southwestern Egg Rolls

This was a big success for a dinner party we had over the weekend. Everyone LOVED it - I followed the directions exactly. The only thing that threw me off was the cooking time. First of all I used a Daddy Deep Fryer, but I only fried them for 5 minutes. The outsides looked a little bit browner then I like for them to look, but they did not taste at all over cooked or burnt. If I fried them for less time then the inside was still frozen. Anyway, besides my frying time varying ~ These little appetizers are wonderful! Next time I will make a double batch and freeze them!

Marinated Flank Steak

This is an absolutely wonderful marinade. I had MUCH success with the finished recipe. I followed the directions to a "T" with one exception...I always place my marinades in a big Ziploc zipper bag. It really works great and easy clean-up. Before this marinade I always bought a specialty pre-marinade skirted beef that was a little pricey. The evening I made this I had my company taste test both marinades and this one won hands down. I guess I will start marinading my own fajitas!

Annie's Fruit Salsa and Cinnamon Chips

I'm not sure what all the hype is about tis recipe, but I found it to be okay. I did make the recipe ahead of time by about 4 hours and it seemed to be a little on the mushy side, so I don't recommend making it too far in advance. It was good, but from the rating and reviews I thought it would be outstanding, which in my opinion it was not. I served it with a fajitas thinking it might compliment the Mexican dish since I found the recipe in that category.

Baked Spaghetti Squash Lasagna Style

OMG~ Love this recipe. It is definetly a keeper. I made it for dinner tonight as a low-cal, healthy recipe and everyone loved it (with the exception of my 5 year old daughter that doesn't like anything unless it begins with chicken and ends with nuggets :-) I would not change a thing!

Sausage Jalapeno Poppers

I had a little get together last night and decided to make these instead of my usual deep fried poppers, which are really good too! I read the reviews and made a few changes. First I cut the bacon in half and then by placing a paper towel on a plate, put the bacon down and then another paper towl on top and cooking them in the microwave for 1 1/2 minutes. This removes lots of the grease and decreases the cooking time. I brushed both sides of the bacon with honey prior to wrapping the jalapenos - this was a great suggestion from a previous reviewer. To the sausage mix I added 2 or 3 green onions and 3/4 cup cheddar cheese. They turned out YUMMY!

Carla's Fruit Dip

This was really good - I made it for a gathering last night that had several children in attendance as well. The only thing that I changed was that I used 8 oz. of cream cheese as opposed to 3 oz. Everyone loved it and it was devoured quickly.

Beer Margaritas

I have tried these margaritas before at my sister-in-laws house and remember not being very impressed at all by them. Sometimes she will improvise too much - so I thought I would follow the directions exactly and see what they tasted like. The only drink I drink is Margarita's - it does not matter how cold or what we are eating, that is all I drink, so I know a good Margarita...plus I live in Texas and we have lots of Tex-Mex Restaurants that specialize in Margarita's. Anyway, I did not care for the Margarita's at all and could taste the beer in them. I had one guest that would flat out not drink it after she tasted it and some other people said that they were "o.k." - So I just don't get all the 5 STARS. I guess if you know a good Margarita, then this recipe would just rank around 3.

Jeff's Chili Con Queso

WOW ~ Super Chili Con Queso ~ I followed the directions to a "T" and it turned out perfect. I made this for an appetizer for Christmas Eve ~ I usually do the Velveeta/Rotel recipe, but this one surpasses it by far. There were a lot of yummy appetisers on the table, but my hubby said this one was the best. A KEEPER ~

World's Best Lasagna

I made this recipe the day ahead and refridgeratored it over night for an easy Christmas Day dinner. It was absolutley FANTASTIC. I followed the directions to a "T" and had no problems or gliches. YUMMY :-)

Slow Cooker Chicken Cordon Bleu

I loved this recipe. It is not your elegant chicken cordon bleu a much easier, less extravagant version, but great to toss together in the crockpot and come back to a complete meal. I followed the recipe to a T with a few minor exceptions. I used a thicken cut ham lunchmeat and cut it into 1" squares. I loved the sauce, but next time I am going to use 2 cans of cream of chicken and 2 cup milk for the sauce. YUMMY!

Best Egg Rolls

I am giving this recipe a three. Yes, it was tasty, but two things really turned me off. One being they were way too greasy even after letting them sit on a paper towel to drain. I did use my Little Daddy Fryer, so if I try it again, I would probaby opt to fry them in a pan with less oil. Second, way to much pork for my taste. I think half pork and half cabbage mixture would be a better mix. I used the coleslaw prepared bag and it worked out super good and would definetly suggest it.

Brown Jug Soup

I really did like the base of this soup. I actually mixed the ingredients together and put it in my crockpot on low and let it simmer all day. The only thing I did not like is the abundance of veggies. I think next time I would add brocolli, potatoes and a few other fresh veggins. The mixed vegtables were a bit too much for my desire.
