Blackened Tilapia with Secret Hobo Spices

My first time cooking tilapia and it came out great! The spices were a good mix-- I used about a quarter of a teaspoon of cayenne pepper --and the fish came out perfectly. Definitely making this one again!

Easy Seafood Fettucini

I used less butter, fat-free milk, Healthy Request cream of mushroom soup, and no scallops, but the dish turned out pretty tasty. I also threw in mushrooms. That said I think I'll use a bit less milk next time, since the sauce was a little bit thin. We also don't seem to have used much of it as leftovers, unfortunately-- I think a little something to add a bit more savoriness to the sauce (perhaps some garlic salt) might help. Still and all though, quite good and easy.

Honey Ginger Shrimp

This probably would have been good-- but a tablespoon of red pepper flakes is WAY too much. Wish I had read more of the reviews since I see a lot of people decreased the amount of red pepper, but the boyfriend and I couldn't even finish it and had to go to plan B.

Things that sound too good to be true often are-- but this isn't one of those times! Follow the recipe exactly as it says and you'll have soft, fluffy, and very tasty cookies in no time!

Smothered Pork Chops

The pork turned out pretty dry inside-- I may have overcooked slightly, but I was disappointed, especially since I used the same amount of sauce to cook only two pork chops instead of six. My boyfriend, who has no sense of smell, also didn't find the sauce that exciting and added his own barbecue sauce. Probably because it's so garlic-heavy. I don't think we'll make this one again.

Slow Cooker London Broil

Easy and delicious-- picked it out when our local safeway had a sale on london broil. I forgot the tomato soup, though, so I actually just squirted in some ketchup instead...worked out very well, and the leftovers have been great for sandwiches and the like! I think I'll try it again with a few more additives (I saw someone added mushrooms in-- mmm, fantastic idea), but a perfect easy slow-cooker recipe to start with.

Rosemary Biscuits

A great basic biscuits recipe. My boyfriend can't taste rosemary (no sense of smell), so I swapped out the rosemary for some parmesan cheese, which was tasty. Next time I might even try some cheddar. Very easy, very adaptable. Also, the amount in this recipe makes four largeish biscuits for me; I think cutting into eight would be a bit small.

Giant Spice Cookies

I made these cookies on a whim because I had what I needed to make them (except I replaced the molasses with whipped honey because that's what I had). I was really impressed-- they turned out better than I expected! The first batch was on a standard cookie sheet with olive oil spray, and I wound up baking it for 10mins, then letting it sit on the sheet for another five or so. The second batch was done on a silicon sheet sitting on a regular cookie sheet, no oil, so I gave it a few extra minutes in the oven and I also let it sit on the sheet for about 10-15. Both batches turned out good! I also made the cookies smaller in general, so I came out with 22 cookies instead of 10. Love the recipe. It's light and tasty! My only concern is how quickly the cookies could dry out, which is a problem I've had with other recipes in the past...we'll see!

Blackberry Wine Cake II

Great recipe! Came out perfectly the first time I made it-- even though I replaced the jello with unflavored gelatin and a little bit of blackberry jam instead. It didn't come out quite as nice the second time I made it (per my mother's recommendation I used less of the unflavored gelatin). I also tried the recipe the exact same way as the first time but with a passion fruit wine (this time just a little more than a cup of wine, no jam) and it turned out VERY nicely. Try it with any fruit wine!

Tasty, but they turned out pretty small, and they burned a little too. Also, they stuck like crazy to the ungreased cookie sheet. So my recommendations are: - Spray your cookie sheet - Make the drops about 2x the size that the recipe says - Maybe add a bit of salt

Two Ingredient Pumpkin Cake

I don't add any eggs or anything-- the cake was hard to mix by hand (easy with a hand mixer!), and it tastes great every time! I add a glaze made of confectioner's sugar and water (or skim milk) and it's the perfect and perfectly SIMPLE dessert!

Low-Fat Cherry Cobbler

Delicious and reasonable, nutrition-wise! I swapped out the cherry pie filling for peach and it worked out great. But next time I'll probably be more careful about spreading out the fruit evenly.

Pasta and Garlic

A little bland, but I wasn't very careful with the recipe-- I don't think I had a pound and a half of pasta (I just used one box of spaghetti), so I mostly winged the amount of the rest of the ingredients. Would definitely add more garlic and more parmesan next time-- but I was very light on the parmesan. I also added mushrooms, for the record, and found that it was nice to have another texture in with the noodles.

Oat Applesauce Muffins

The muffins taste great and it was pretty easy to do. I recommend greasing the pan rather than using muffin cups though-- the only downfall I had making these was that so much of it sticks to the muffin cups!
