Raspberry Vinaigrette Dressing

Yum Yum. I used EVOO and also replaced surgar with splendor. This is great on spinish salad. Will also used with other salads I make.

OMG this was so simple and so good. I also did not use currents. I soften rasins and used them. You can subsituted almost any fruit or just leave out.

Balsamic Vinaigrette

Simple and Easy. Has a little zest. I used regular balsamic. Can be used as a basic and experiment with other vinagers. In which I plan to do.

Sweet Russian Cabbage Soup

I miss my Mom's Sweet & Sour Stuffed cabbage. This receipe sound pretty close to what I remembered as a child except the beef was rolled into the cabbage. She also used sour salt which I have not idea if they still make. I did cut the sugar to 1/4 or so and added an extra teaspoon of vinager. This came out pretty good. Not like Mom's but pretty close. I will make again but will tweek and make thicker. I rate this as 4.5 stars and simple.

Easiest Eggplant

I use Panko breadcrumbs (lighter) and used low fat mayo. I seasoned well. I followed the receipe and it was OK. When I added Tomatoes and Cheese on top it was better. I will use my several other methods of cooking eggplant. And for really low fat eggplant, slice, brine, season and bake 30 - 45 min. Eggplant Chips, Yum.

Cadillac Pimento Cheese

Great simple recipe. I used lite ingredients so I saved a few calories but it tasted as good as the first time I made it. I used 4 oz. pimento's, 2 cup of low-fat cheddar cheese,low fat onions & chives cream cheese, about 1 tbsp of light sour cream, lite mayo not quite a 1/2 of cup.lite mayo.cup, Cayenne pepper to taste. I also added sliced salad olives just for fun. Put in middle of tray with sliced tomatoes, cucumbers, and party rye bread. Simple and easy appetizer.

Creamy Cheesecake

It was very good, for a quick and easy cheese pie dessert. Add an extra grate of lemon. I have also changed extracts and prepared pie shells. Make sure you beat well and as all cheese cakes bake it in a water bath.

Cottage Cheese, Avocado, and Black Bean Salsa

This was not bad and pretty healthy. I will make it again and tweek a bit. I used a small cluster tomatoes added an extra avocado and used pace. I mashed the avocado with 1/2 black beans and added to cottage cheese. I wanted to make it more dippy.

Quick Raspberry Sauce

Raspberry Almond Shortbread Thumbprints

This was the worst and dryest thumb print cookie I ever made. I don't know what I would sugguest to make them tastier. May less flour, more sugar, vanilla. In any case try another receipe.

Crab Stuffed Mushrooms II

They were pretty good but I had better. I added a bit more cream cheese, used lump crab and left out the water chestnuts. Maybe adding another squeeze of mustard but with the price of crab I may try with imatiation crab and tweet flavor a bit more.

Apricot Cream Cheese Thumbprints

Bland and floury texture not much taste except for the jelly. I love cream cheese and thought this would make the cookie more shortbread. I quess I like my cookies a bit sweeter and not like cardborad. I will try another thumb print receipeand use as my basic cookie dough. I will not make this again and will remove from my receipe box.

Chocolate Lovers' Favorite Cake

A big yummy treat. I used tin foil pie pans since I wanted to make a layer cake. They were 8” and I could have used three as opposed to two. Since I only used two pans I had enough batter left over to make 4 small mini bundt cakes. I spray butter flavor pam cut 2 round pieces of parchment paper for the bottom and greased the sides with butter. Let this cool at least 20 – 30 minutes. The cakes will slip out of the pan but just remember to peel off the parchment paper before layering. I thought the batter was too thick, almost brownies texture so I decided to add ½ cup evaporated milk and ½ cup of water. I did replace the almond extract with the vanilla. I also used butter in place of the oil, DO NOT overfill. Fill no more than 2/3 or you will have a huge overflow and make sure you place under a cookie sheet. BTW the overflow tastes great. This cake tasted fantastic, a rich lighter texture since I added the liquid. Omit the liquid if you want it denser. Do warm for a richer taste. I made a raspberry layer with extra raspberry sauce. This is now my basic chocolate cake recipe.

Fresh Asparagus Soup

I really enjoyed this soup and plan on making it again. I did not have the veg. broth so I used chicken instead. I will try with veggie broth next time. Also instead of Soy milk I used 1/2 cup 1% milk and 1/2 cup evoporated skim milk (makes it richer & creamer). I am also going to try with other veggies.

Coconut Cake III

Yum, everyone raved and wanted the receipe. They had no idea I started with a cake mix. I did make 2 changes to the cake. I used 1/2 melted butter instead of oil & I omitted the nuts. I think next time I will add a little more coconut but will shread. I may also add another egg. I would also like to add coconut extract instead a vanilla. I am a sweet junkie.
