Elizabeth's Extreme Chocolate Lover's Cake

Worth EVERY CALORIE. A delicious, moist, deeply chocolate cake... the kind one craves with a glass (or several glasses) of milk. Tip: One of those big 1lb (?) chocolate bars from Trader Joe's--the darkest one, is just enough chocolate for this cake. And it's just $5 bucks; amazing deal for Belgian chocolate. It is 72% cacao if I recall and has just a touch of sweetness, so I adjusted the sugar in the recipe down just a bit--like 1/2 cup. Anyway, THANK YOU ELIZABETH, for your extremely good Extreme Chocolate Lover's Cake!

Cherry Chocolate Chunk Cookies

Fantastic combination... the tartness of the cherries against the sweetness of the chocolate... wrapped in a buttery dough... punctuated by nuttiness. :-) What's not to love???

Tomato sauce made this MUCH too tangy/sour for my taste. Also, it sort of glops onto the vegetables if you simmer it as long as needed to remove some of the acidity. I would use crushed tomatoes instead next time and increase the water/broth combination a bit to ensure soupy consistency.

Kitchen Sink Cookies

This is a GREAT cookie recipe. After minor adjustments for my high altitude, it NEVER fails me. I sometimes improvise with other add-ins: peanut butter chips, caramel bits, different nuts, flaxseed, etc Kids and adults alike LOVE these cookies. It is nearly impossible to stop from eating the dough out of the mixing bowl. But hey, we all know that cookie dough has no calories until it is baked. :-D

Sweet Potato Chili

This is a fantastic recipe--a wonderful and most nutritious "comfort food." My two little boys enjoyed it, also, with a sprinkling of grated cheddar (to offset the heat a bit). Thanks for a great recipe, salt&light!

Veggie Vegetarian Chili

Great recipe, it seems... my husband came home and couldn't wait to taste it, as it smelled so good. He is now licking his bowl, repeatedly saying THIS IS SO GOOD." I took another reviewer's suggestions and drained (and rinsed somewhat) the bean and added celery (but keeping the mushrooms in). P.S. My husband now added "That was so good... I'm going to have some more. Is that OK?" :-)

Grilled Mediterranean Vegetable Sandwich

Oh, what a WONDERFUL sandwich! My only change was to serve it on sourdough and experiment with different cheeses: Muenster and Feta--putting under broiler a bit. Both were great. Oh, and I added a squeeze of lemon juice and pinch of oregano to the garlic/mayonaise recipe.

Pumpkin Pie Squares

Easy to make and easy for the family to love. They are a little overly moist and fragile the first day to be called "squares," but by the scond day, the texture is perfect. Awesome midday snack with a cup of coffee, too! Thanks for the recipe!

Eggplant Parmesan II

Awesome... and so easy. Do take another reviewer's advice and initially bake the coated eggplant on an olive-oil coated baking sheet (I needed two sheets) at 450 for 7 min. per side. Then lower the heat to 350,assemble the full dish, and bake until it is bubbly and yummy. Served over wholewheat spaghetti and with a salad on the side, this was just delicious. And SO much less oil than if it was fried.

Greek Pasta Salad with Roasted Vegetables and Feta

This is a lovely salad... and one made heartier by the use of eggplant. Roasting the veggies as directed, followed by, say, 2 minutes under the broiler, gives them a wonderful, roasted flavor. Oh, and use the most legit feta you can find. It's worth it. MMMMMMMMMMMMMMMMM.

Never Fail Pie Crust II

I can't put in print the words that came out of my mouth as I attempted this recipe. Like some other reviewers, I found that the dough came out entirely too wet/gooey. And this in our very dry climate. Anyway, I added & added flour to the point that I had a GIGANTIC ball of dough that STILL fell apart. It may have had to do with the fact that this is a hot July day--didn't help my disposition and apparently did not help the dough. To be fair, on my SECOND attempt (same hot July day), the dough came out a bit less gooey, and, with the addition of at least another 1/2 cup flour, was acceptable to work with. Pie is in oven--we shall see. A piece of the edge already fell off.

Key Lime Pie VII

AMAZINGLY GOOD. And it is AMAZING that this pie sets up, given the amount of fluid and the fact that it bakes so few minutes. But it did! And its texture and taste was just delicious. My husband and I agree that this is better than anything we had in Florida. Thanks very much for sharing this recipe!

Ricotta Cookies III

These are a lovely, delicate cookie with a delicious, buttery flavor and texture. I sprinkled some sliced almonds on the last batch for a more "grown-up" version. They toasted perfectly and made the cookie all the more delicate in form and taste. But my little boys loved teh candy sprinkles. Oh, and if you don't have shortening, all butter in the icing works fine.

Sweet 'n' Hot Glazed Salmon

My results were good, despite deviation: very sweet, but very tasty sauce (ued homemade peach jam). I did omit the honey... Also, used sockey salmon (not so hot--a bit fishy). However, I gave this four stars, as I know it would turn out very well as directed! SAuce (even as prepared) really is delish.

What a wonderful way to use both gorgonzola and basil (lots comes from one of those plants, doesn't it?)! Very "gourmet" with little gourmet work! :-)
