Strawberry Jam

I've never made jam before so I was pleasantly surprised at how easy this was to make. And with only 3 ingredients! I read through other reviews about it being too sweet, so I only added 2 cups of sugar and made sure to taste it before cooking it. I think next time I'll only add 1 cup of sugar. Didn't feel like busting out the thermometer so I cooked it about 15 minutes. I placed the finished product in air tight containers. I'm planning to give one to my parents as a nice treat.

Authentic French Meringues

I think that I didn't mix it long enough because mine came out flat. They also cracked while they were in the oven. Next time that I have left-over egg whites from another recipe, I'll try this recipe again and add some cream of tartar to help keep them stiff. And also some sort of flavoring since by themselves they seem way to sweet.

Chocolate Cookie Bark

Very easy recipe to follow. I think that next time I will try it with the peppermint cookies or add some peppemint extract to the chocolates. I did leave out the peanut butter in this batch because I'm not sure everyone would like it. I'm planning to bring it to work so my co-workers can enjoy some homemade treats for the holidays.

Easy OREO Truffles

These are very, very rich and delicious. I love Oreo cookies and this recipe is another way to enjoy them. I tried the toothpick idea that other reviewers suggested when it came to dipping the truffles but I didn't have much success. I still had some of my son's old infant spoons so I would drop the truffle into the chocolate, then place it on the baking sheet and then smooth it out a bit with the baby spoon. Instead of dipping them all in semi-sweet chocolate, I dipped some in white chocolate. I also rolled a few in powdered sugar and some in cocoa powder. I plan on making a large batch for Christmas!

Best Brownies

I found this to be an easy recipe to follow and the brownies turned out moist and delicious. I skipped the frosting and dusted with powdered sugar. I will definitely try it again with the frosting.

Giblet Gravy II

My hubby made the gravy yesterday for Thanksgiving. It was very tasty and easy to prepare. Consistency was just right. Much better than any gravy from a jar. We didn't have any sage on hand so he substituted thyme instead. I made sure he didn't have any lumps prior to turning the heat up by using a hand blender. Will definitely be preparing in the future.

I skipped the sugar and instead added 1 cup chopped onions, 4 cloves of garlic and about 2 tsp of sesame oil. This recipe is super easy and you can add or subtract ingredients to taste.

Banana Cream Pie Made Easy

Very rich and thick. So thick that I had to add some milk to thin it out. I took the advice of others and split the filling between two pie shells and added some vanilla and sugar to the whipped topping. Next time I think I will use two cups of whipping cream and one cup of milk to keep the banana cream from being so thick.

Tofu Parmigiana

I made this last night for my family and we all loved it. I used a bottle of spaghetti sauce and it came out delicious. At first, I had trouble with the breadcrumbs falling off so I made sure the tofu sat in the crumbs for a while. Will definitely be making in the future.

Easy Meatloaf

Great starter recipe. It was delicious. My family really enjoyed it. I doubled the recipe, split it into two loaf pans and topped one loaf with sliced bacon and the other with the glaze. Didn't have bread crumbs so I used crushed Ritz cracker which added a nice buttery touch to it. For the glaze, I used Dijon mustard and it came out great. We like garlic in our house so I put four cloves finely minced. Served with roasted veggies and smashed potatoes. Will definitely be making again.

Banana Cake VI

What a great recipe! SInce I didn't have any room in my freezer I skipped that step but it still came out moist and light. I split the batter into two disposable foil pans since it seemed like a lot of batter. I think that helped it to become very fluffy. I frosted one and sprinkled the other with powdered sugar. I agree with other reviewers that it does take more than an hour to finish baking. It's more like 1hr and 20 minutes. Next time I think I'll add an extra banana to the batter and maybe try some different frostings. This recipe is another keeper. Thanks for sharing!

Oatmeal Raisin Cookies I

I found these cookies to be quite delicious. I had none of the problems that some reviewers had regarding consistency. My cookies weren't thin, dry, or crumbly. Nor did they stick to the baking sheet. I baked the cookies for about 10 minutes, cooled on the baking sheet for 2 minutes and then transferred to a cooling rack. Came out chewy and moist. Perfect amount of cinnamon, in my opinion. Maybe next time I'll substitute some dried cranberries for variety.

Carrot Cake III

Made this for my co-workers for a potluck and they liked it a lot. I'll definitely make this again. The frosting was pretty thick so I added just 1/2 tsp of milk and an extra 1/2 tsp of vanilla to thin it out and I left out the nuts. Another keeper. Thanks!

Alfredo Sauce

Simple and delicious. Next time I think I'll try a parmesan blend because the sauce was a little grainy despite my constant whisking. The flavor is so rich and satisfying. A great comfort food. A keeper for sure.

Broiled Tilapia Parmesan

Simple dish with lots of great flavors. Got rave reviews from my husband. My sister enjoyed it as well and she's not a big fish eater. I added a little garlic powder since I didn't have any celery salt on hand. Also used onion flakes instead of onion powder. Easy to prepare which was a big plus for me. Would definitely make again. Delicious!

Gravy Baked Pork Chops

Simple dish to make, so that was a plus for me. The chops turned out a bit dry for me so next time I'll probably skip browning them first and just cook it all together. Added a little thyme for flavor but overall a delicious dish.
