Pork Chops Italiano

If this had been cooked maybe a fraction of the time suggested, it would have had a better chance. I'm sorry to say that I probably won't make it again.

Italian Sausage Soup with Tortellini

Have to admit that I didn't follow it to a T (or is it tee?)...anyway, so I used what I had on hand. One cup of chx broth in the fridge so I threw that in...and I had no beef broth so I used a cube of bouillon and a little pod of stock which I put into boiling water to make the beef broth needed. I didn't have zucchini but wound up throwing in celery and red pepper. I didn't have tortellini either but used anelli pasta instead. On top of that, I had no fresh herbs so I used dried. Regardless, since I'd never made it before, I didn't know the difference and this tasted fantastic. I put fresh grated parmigiano-reggiano on top with fresh parsley (I did have that)...and both my husband and I loved it. I will gladly make again and again.

Sauteed Carrots and Leeks

Both my husband and i really liked this. I used the bagged organic carrots and just sliced them up but I do think it would be better with using regular (and larger) carrots. Regardless, I served this with another recipe found on this site - a Salisbury Steak recipe - but these carrots were the standout. The main course paled in comparison. I will definitely make these again.

Salisbury Steak with Mushrooms

I followed this recipe as written and although I'd love to give it more stars...I can't. : ( It just didn't have enough flavor. Maybe if the mushrooms and onion were sauteed together first...maybe with a little red wine? I don't know, I make no claims at being any sort of grand chef...but this was just ok. It definitely falls in the comfort food category but needs more flavor. Lipton soup? Or maybe using french onion soup in place of the beef broth. Actually, that's not a bad idea.

White Bean Chicken Chili

Loved it! Made it almost a year ago and finally put it back into the rotation - tonight, in fact! I've missed it, it was so good! I brought it to a Super Bowl party last year and I was asked several times for the recipe. I used both canned tomatillos AND salsa verde as well as canned corn. I used a little corn starch as well. I want to add more than one can of beans but my husband isn't a fan. He wanted me to make this without beans but I said no way - it's too good the way it is! Anyway, I'd like to add more veggies...maybe I'll sautee a little orange pepper next time for varied color. YUM. Shredded cheese on top is a must...oh, and I also added canned jalepeno instead of chiles this time. Enjoy!

Italian Vegetable Soup

I thought this was great. Taking the suggestion of so many, I added more water - 3 cups worth - and I used 3 beef bouillon cubes in total. I drained both the corn and kidney beans before putting them in and only used 1 can of beans. I used fresh french green beans...AND...I did the whole thing in the slow cooker. I started real late on this, at 3pm and I put it on high. I was finished chopping everything up and threw it all in by 3:30pm. Since time was going to be tight, I put it on high as I was throwing everything in to get it started. By 7:30pm, although the veggies weren't completely done, we had dinner ready. It's still in the crock pot now actually and I'm giving it another hour total. It was a really great and very healthy meal. I will definitely make it again! Super easy, too.

Braised Balsamic Chicken

Totally delicious! I admit I made minor adjustments. I used more canned tomato than called for (I was only making 2 chicken breasts)...about 3/4 a can and I also added fresh sliced tomatoes. I added a tablespoon of Cabernet as well. It was fantastic. My husband loved it and I did too!

Easy Chicken and Corn Chowder

I made this the other night and the family loved it! I only used 1 1/2 cups of half & half and it came out great. Oh, and instead of flour, I used cornstarch (1/4 cup)...still came out great!

Shepherd's Pie

I'm giving this 5 stars because my husband loved it. He had to stop himself from having 3rds! I would have given it 4 stars because I did tweak it slightly since it seemed to lack a bit of flavor. I'd also make a few changes next time based on other reviews. I added 1 box organic condensed mushroom soup but couldn't find the same in the celery soup so I added about a quarter of a can of cream of celery soup. Next time, I'd skip that altogether. I had to add some beef bouillon because the flavor just wasn't really there. This helped ALOT. Next time, I'll add some garlic to sauté with the ground beef, I'll probably add a dash of Worcestershire to taste, less cream of mushroom...and definitely a few more potatoes. 5 wasn't enough and it wouldn't cover the entire thing. There were so many gaps. I added a little milk and butter to the mashed potatoes which I'd do again...and also melt cheese on top!

Beef Enchiladas II

We liked it! Last night I made Sloppy Joes and I used the leftover sloppy joe mix as the base for this tonight. It was just ground beef with chili sauce (and a few other ingredients) but it was perfect. Next time I'll try another type of enchilada sauce. I tried Trader Joe's tonight and it was okay. My daughter complained it was too spicy and wouldn't eat it after that. Regardless, my husband and I liked it but I'll probably try a Mexican brand instead (Goya or another - Sofrito sauce might be good in this).

Super Easy Sloppy Joes

We loved it! I used the "Homade Chili Sauce" brand that I bought from Safeway. I found another reviewer had mentioned it so I tried it instead of Heinz. I also used the mustard that's optional - I had Gulden's Spicy Brown mustard on hand so that went in (I eyeballed it) and I did use some brown sugar but way less than what was called for. I tasted it beforehand and realized it needed just a hint of sweet and again eyeballed it. It came out great. There were only 3 of us eating so I used 2 lbs. of ground beef and about 3/4 of an onion and less than a full cup of celery. Terrific recipe. Oh, and since another reviewer had mentioned perhaps sautéing the celery and onion with the beef while it was browning, I tried that. I seasoned it with salt and garlic powder. After it was done, I drained it, added a little more salt and then added everything else. I'll definitely make it again. I served it with Alexia brand potato/carrot/green bean sauté. It's frozen and fires up quickly in a pan with a oil-based seasoning pack that comes with it inside. Super easy kid-friendly meal.

Garlic-Lemon Double Stuffed Chicken

Both my husband and 10 year old loved it! Only changes I made were a little less cream cheese and a little less butter, based on other reviews. Oh, and I also used shredded cheese - Triple Cheddar. Next time, I'll cook it a little longer or cook it at 375. It was juuuuust done at 350/30 minutes...the way where you wonder if it really should have been cooked a little longer. So to cut down on time, I'll cook it at 375 or 400. Otherwise, awesome. I'll definitely make it again.
