Beet Greens and Baby Spinach with Red Kidney Beans

This was a good idea, but using 1/4 cup of balsamic vinegar may be a better idea. The vinegar taste overwhelmed the rest of the flavors. My husband overcooked to try and reduce down the vinegar, and that made it mushy...so, we put it in the food processor and it made a great bean dip!

Absolutely delicious, melts in your mouth and so easy to make! I made mine with Splenda and could not tell the difference at all. The pecans are much easier if you can chop in a small processor, so that the pieces are more like granules. I only let my batter sit for about an hour, and this was plenty. Will definitely make these again!

The Best Banana Bread

Simple, easy and delicious! I used 1/2c Splenda and 1/2c applesauce instead of the sugar and the loaf was moist, sweet and perfect consistency. Very good!

Warm Sweet Onion Spread

This quick, easy spread with only 3 ingredients is DELICIOUS! I had about 8 slices of swiss cheese that were stuck together and crumbling, so I searched here for an idea and found this...glad I tried it! My husband loved it and asked for a repeat soon. Made it with the chopped up cheese, 3/4 large white onion and low-fat mayo. Together with some garlic Town House Toppers, its a definite party-bring!

Spring Salad

This was delicious! When I saw all the great reviews, I had to try it - and glad I did! My picky teenager even had 2 helpings, which is rare. Some changes/additions I made: I served this as a main dish, and garnished with fresh strawberries..when you mix them in, it tastes wonderful. Microwaved the broccoli with a little water at the bottom of the bowl for 2 min, which made it a softer, greener, and more flavorful. Also, used 1 cup Light mayo, 1/4 cup Splenda, and Rice vinegar for the dressing and that was delicious, too. I used Craisins as suggested - great addition. I sprinkled the top with sunflower seeds and it was a hit with the whole family!

Corn Nuggets

Maybe the liquid measurement is a typo? 2 tbls of milk just doesn't cut it...neither does 1 cup of milk, which is what I ended up using to make the batter liquid enough to coat the frozen corn. But, that fell apart anyway and just made a complete mess of my deep fryer. Bummer that it's the only 'corn nugget' recipe on this site..you just can't buy these frozen anymore!
