Kentucky Biscuits

Reviewed: May 18, 2006
Wow, this was very good. I never make biscuits because they always seem so dry, not these! One thing I did do was freeze the stick of butter and then grate with a box grater (I saw this on a cooking show). That way the butter stays nice and cold for a nice tender biscuit. Plus it mixes much easier with the dry ingredients. Will definately make this again!

Bone-In Ham Cooked in Beer

Reviewed: Dec. 14, 2005
I normally don't really care for ham, but this was awesome! I used a 7.27 lb. brown sugar cured bone-in ham. Dumped 1 can of beer on it put on an 8 oz. can of pineapple rings and dumped that juice on it too. I baked it for about 2 1/2 hours (I turned to oven up to 350 for the last 1/2 hour). I basted it about 5 times while cooking and let it rest for about 15 minutes before carving. This is by far the best ham I ever made and have probably ever tasted! I was so moist and tender. I can't wait to make it again! Thanks for sharing this recipe.

Baked Fennel with Parmesan

Reviewed: Oct. 24, 2006
This dish was really great! I was nervous because I don't like the taste of raw fennel, but when cooked it loses that harsh licorice flavor and tastes wonderful. I did add one cup of creme fraiche and I know I added about a 1/2 cup of cheese. I have also used sour cream instead of creme fraiche and it works just as well. Great dish, I'm really glad I tried it!

Lemon Dill Salad Dressing

Reviewed: Jan. 10, 2005
Good dressing, although the mayo stood out a little too much for my tatse. (I split the recipe) but, I added a little more buttermilk, some garlic powder, scallions, and a little sour cream. And I only had fresh dill, I know that dried has a stronger flavor. I will probably make again if I have extra buttermilk.

Grandma's Sour Cream Pound Cake

Reviewed: May 20, 2005
This is a great recipe! I omitted the mace, did not have sour cream on hand so I substituted by adding 1 Tbl. lemon juice and enough whole milk to make one cup (like buttermilk). With my oven I baked less than 1 hour, you definately need to keep an eye on it while baking. I also iced it with the recipe for "Perfect Chocolate" Frosting, on the back of the Hershey's cocoa can. My family LOVED it! There was a piece left almost a week later and it was just as moist as the first day!

Dip For The Stars

I have made this dip for several occasions and every time it is a winner! Everyone ALWAYS loves this dip. The flavors all blend so well together. Every time I make it I always get requests for the recipes, and I always hear "oh good, you made that wonderful dip!"

Caramelized Onion and Blue Cheese Orzo

Reviewed: Jan. 10, 2005
Great side dish! Did not have mascarpone on hand so I used cream cheese. And I had Gorganzola (same thing?) so I used that instead.

Flank Steak with Garlic Wine Sauce

Reviewed: Jan. 10, 2005
Great dish, very easy to make. I cooked the steak a little longer because my husband does not like rare meat. It was still pink and very tender. Was even better the next night for leftovers!

Noreen's Mom's Simple Summer Squash Bake

Reviewed: Jun. 28, 2005
Really good flavor. I used zucchini and melted a little butter to mix with bread crumbs and sprinkled on top. At first I thought it looked a little watery, but the flavor was very good. My family enjoyed it, something I would make again!

Bread Machine Challah II

Reviewed: Apr. 14, 2006
This is by far my favorite bread recipe! It is a nice sweet dense bread. I have made it several times. Everyone loves it and I have had quite a few requests for the recipe. I do notice the moisture of the dough can sometimes be dependant upon the weather. But saying that I have never had it fail for me. I do sometimes add a smidgen more yeast (I use the stuff in the jar). Sometimes I will also make one large loaf instead of two small ones. I just love this recipe it is definately a staple in my recipe box, and THANK YOU for sharing this one!

Oatmeal Raisin Cookies IV

Reviewed: Apr. 3, 2006
Very good cookies! I used a HEAPING cup of raisins and soaked them in 2tsp. of vanilla for an hour, then realized I was supposed to add the eggs. So, I added the eggs and soaked them for another 45 minutes. (I don't know if that made a difference or not, but the raisins taste really good). I cut back the baking soda by a 1/2tsp. and added a 1/2tsp. of baking powder. They turned out beautiful! My kids couldn't wait to get their little hands on them. I will definately make again, the only thing I might do different is only add a 1/2 cup of white sugar (they sure are sweet.) Thanks so much for sharing this one!

Southwestern Pasta Salad

Reviewed: May 10, 2008
Just made this and it's fantastic. I didn't have lime juice so I used lemon. Can't wait to make it again with the lime. Took others advice and used only 1/4 cup olive oil and definately extra juice to give it a good bite. This would also be really good with some avacado added in at the last minute.

Vidalia Onion Pie

Reviewed: Jun. 1, 2005
This pie was great! I did make some changes though. I cut the recipe in half, but used 3/4 cup sour cream, instead of parmesan cheese I used about 1 1/4 cup grated swiss cheese (1 cup in the ipe and 1/4 or more sprinkled on top), and instead of hot sauce I used a sprinkle or two of nutmeg. The changes I made were for personal preference, but the pie turned out wonderful!

Sweet Pork Chops

Reviewed: Feb. 9, 2005
Yummy! I took advice of others and used cornstarch, still had to thin with more apple juice. (not a problem w/ 2 small children). I also added two very large cloves of garlic, chopped. Really easy and I thought very tasty.

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Jan. 12, 2005
Did not care for this at all. Very greasy, had to keep skimming out oil. My husband thought it was ok. I wouldn't recommend using a whole chicken, it falls apart and bones can be dangerous for little ones. I do think it might be better with chicken pieces.

This recipe was very good. Such a nice change from regular stuffed peppers. My husband could not get enough of these! Definitely boil peppers for 2-3 minutes before stuffing! Great recipe!

Simply Divine Meat Loaf with Spinach

Reviewed: Jun. 1, 2005
I will start by saying my husband really liked it. But I did not. I thought it was way too salty and not as firm as plain meatloaf. With all the different ingredients I was really excited to try this one but I think the onion soup mix must have over powered everything. I even waited and tried again when it was cold, but still thought it was way too salty, sorry.
