West Indian Curried Chicken
Wonderful, thank you so much! I did not have potatoes on hand, so used two green plantain, cut into chunks, and since we like things very spicy, added one green and one yellow scotch bonnet from our garden, diced. Did not use the salt at all, due to health reasons having us really cut down on salt content. Great recipe and the perfect technique for a wonderful, moist chicken, thank you so much!

Chicken and Sausage with Bowties
Was looking for a recipe for pasta without all of the gloopy thick sauce, and found it! I didnt use the chicken, instead used 1 link polksa kielbasa, diced, since thats what I had in the freezer. The tomatoes were a bust as well, so I used some canned "tomatoes and habeneros" (we like things spicy!). Kept the garlic in the pan and sauteed that with the rosemary (fresh, chopped) in the olive oil, added the meat and a medium zuchinni. Had bowtie pasta on the side (the 'sauce' was used as a topping for the pasta and will be great recycled into another meal incarnation tomorrow night!), and topped it all with a drizzle of olive oil, chopped black olives and dried Parm+Romano cheese. Can totally see doing this again when spinach comes into season again, yum. Dont expect a thick sauce with this; it is a lovely, very versatile pasta and tomatoes dish that is simply scrumptious! THANK YOU!

Three Cranberry Relish
Wonderful, my first time making homemade cranberry relish/sauce and it is divine! Used a potato masher to roughly crush the berries in the syrup after they popped, and chilled to set. Not only a great hit and delicious, is beautiful, too. Thank you so much!
