Refrigerator Dill Pickles

just opened jar that i pickled 4 days ago. very disappointed- not crisp enough- there is no crunch and the flavor was more vinegar than any thing else. will now turn them into pickle relish.

Roasted Chicken Rub

I used smoked paprika, eliminated the celery flakes, added a touch of ginger and used the rub on my baked baby back ribs- outstanding flavor!

Cream Of Carrot Soup

Excellent- but then, carrots are one of my favorite vegetables. Only substitution, I used EVOO rather than butter, and skipped the curry. Definitely a 'keeper'!

Bela's Stuffed Red Bell Peppers

recipe is pretty bland and dry. I cooked the rice in vegetable stock, used 1/2 mild salsa and 1/2 water mix rather than all water. rather than baking the peppers I parboiled them, Dropped them into boiling water for 3 or 4 minutes. black beans and kale were my other substitutes because that was what I had on hand. my vegetarian friend gave them 5 stars.

Cheesy Potato Pancakes

Having made traditional German pancakes my entire adult cooking life, I thought I'd give these a try. I eliminated the bacon bits because this was going to be part of my twice weekly vegetarian meal. Found these to be very hearty and extremely tasty. I will remember to add BUTTER to my traditional potato pancake shortening, certainly adds more flavor.

Slow-Cooker Barbecue Ribs

because this was for the 'little ones' too, I used cubed boneless pork western ribs. only change to the sauce: less ketchup, more chili sauce and I used apple cider vinegar. Next time I'll also add some smoke flavoring. Everyone loved this, from the kids all the way to Gramps.

Mexican Sour Cream Rice

tried this recipe twice. second time altered recipe by upping sour cream by 1/2 cup, adding another can of chilies and a teaspoon of emeril's seasoning. i am not a fan of cilantro so i crushed some coriander and a bit of celery seed and added that to the cooking rice. also i think 30 min. baking is a bit too long. 25 min. with a couple of minutes under the broiler to brown the cheese is plenty. got rave reviews from family and friends.

Creamy Cheesecake

i baked the 'cake' at 325 for 55 min. turned the oven off and and left the cake in,with the door ajar, for another 1/2 hour. this is a quick, easy, extremely tasty plain cheesecake. remember to refrigerate at least 8 hrs. before serving.

Iced Pumpkin Cookies

not a fan of pumpkin but these cookies surprised me. the only thing i changed was adding a teaspoon of molasses to the dough- do that for my pumpkin pies so i figured it should be good here too. got rave reviews.

Grilled Peanut Butter and Jelly Sandwich

I have used this recipe for years, however, I use JAM rather than jelly and recently I've started 'buttering' the bread with real mayonnaise instead of the butter-much more even browning. A word of caution: THE JELLY OR JAM STAYS HOT FOR A VERY LONG TIME-- BE CAREFUL WHEN SERVING THIS SANDWICH TO CHILDREN.

Corn and Black Bean Salad

We love black beans so I upped the recipe to 2 cans but left corn the same. I also added a cup to a cup and 1/2 [I really didn't measure] of medium spicy chunky salsa and a bit of grated onion but eliminated the chili powder. we are not fans of cilantro so I substituted parsley and some extremely finely chopped celery.. Even my 6 year old grandson loved it!
