Creole Gumbo

I had left over sausage and left over chicken in the fridge. Found this recipe, scaled it for four servings instead of eight and made it for dinner...delish! I used chicken stock instead of water and added some garlic powder to the roux. As I have a toddler in the family, I halved the amount of cajun spice. I thought I had shrimp in the freezer but found bay scallops instead. I think almost any combo of meats would work. This recipe is a keeper for those fridays when it's time to clean out leftovers in the fridge.

Yeast Waffles

I'll give it 3 stars as it may have been my wrong doing but these waffles were sour like sourdough. I don't know if that was from being on the counter overnight or if I overheated the milk. I had a 1/2 cup of buckwheat flour left in the pantry and added it to the other flour. As a result, the waffles were soggy. I'll have to try these again following the recipe as exactly as I can.

Smoked Salmon and Egg Salad Sandwich

I regularly make Stephan's broiled Salmon Pesto and always have leftovers. Reheated salmon never tastes right to me so this recipe is perfect for the leftovers. I used yellow onion instead of red, dill pickle instead of celery as I didn't have the recipe ingredients on hand. I also added a little garlic powder in addition to the salt and pepper. Lettuce or cucumber on the sandwich isn't wholly necessary to enjoy it, but it does add a wonderful texture.

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

Altered the recipe as follows. Added 1/4 cup nonfat yogurt, 1 sm pkg butterscotch pudding to the mix. Since few liked the frosting listed with the recipe, I decided to make a pecan praline topping of 1/4 cup butter, 1/2 cup flour, 1 cup brown sugar and 1 1/4 cup chopped pecans (cut together till crumbly). I topped the cake with the crumble mixture and baked 35 minutes. Perfect! Got lots of compliments on the cake flavor and topping.

Dry Ranch Style Seasoning for Dip or Dressing

I used 1/2 tsp pepper and it was way too much, all you could taste was pepper. I'd go with 1/4 tsp if your pepper is finely ground (like mine is). I also agree to cut back on the seasoned salt. Overall a good recipe in a pinch if you need ranch dressing and have no mix on hand.
