Quick Peanut Butter Cookies

I needed a quick, easy dessert recipe for my mom who is allergic to gluten. Wow, did I come across the perfect recipe! I agree, you do have to love peanut butter as it is very rich. I read others saying it fell apart on them, but what I did is mix the ingredients in the morning, put the batter in the fridge and when I got home that evening, I baked them. I also used 1/2 cup brown sugar and 1/2 cup white sugar which I think gives it a better consistency. They came out perfect little (slight) mounds. They do need to be rolled into small balls, about 3/4". I've made this recipe a few times now and what I do if I don't want to bake all of them, is keep them in an airtight container and just bake as I want them. I've kept the batter in the fridge for as long as a week. This is the PERFECT easy, gluten free cookie!

Magic Cookie Bars II

I really loved this recipe. It is very rich so I could only serve small pieces. It lasted almost two weeks in my house and it was as good two weeks old as right out of the oven!

Peach Cobbler Dump Cake I

Excellent idea! I had bought fresh peaches and wanted to use them up and was looking for something like this. I made a few modifications. Obviously, used fresh peaches, I added a handful of fresh strawberries, I used a pastry blender/cutter and mixed a few spoonfuls of brown sugar and cold butter. I don't mind spending the few extra minutes to use the pastry blender...to me it made it a perfectly crusted top and perfectly moist below! Delicious!

Easy OREO Truffles

Oh. My. Gosh. Love this recipe. I just wanted to make a dessert and didn't want to do cookies again. Found this recipe...it is a KEEPER! My new go-to for sweets. I followed other advice #1, chill to "dough" after mixing. #2, I mixed it up a little and added half regular Oreos and half Golden Oreos. #3 I melted the chocolate in a glass bowl over simmering water. It worked great at keeping the chocolate melted while dipping the balls. #4 I used a serving size spoon with holes to put the ball on, used a regular spoon to scoop the melted chocolate over it, then used a fork to move the ball to the wax paper. A little messy, but that's totally okay with me. It's a hit with everyone who's tried it so far!

Molasses Sugar Cookies

The taste is phenomenal but I only baked them for 7 minutes at 350, could be my oven is a little hot though. I wasn't thrilled how flat they turned out but the taste sure made up for that. They started out very crispy but I read somewhere that if you put a slice of fresh bread in the airtight container with the cookies, they stay moist...it worked so well! I changed the slice of bread daily (it's been three days) and they are still nice and soft. I'm big on soft cookies but if it weren't for the bread, I think they'd be more crispy/chewy like some people would prefer.

Hard Chocolate Glaze

Yum! I actually like this much better than the glazes with corn syrup. I used 10oz of semi-sweet chocolate chips since that's what I had. I used half of this for Chocolate Zuchinni Cake III and put the rest in the fridge for my next cake. I hope it warms up okay?! I put the cake in the fridge as soon as I was done glazing and it now has a firm yet soft texture. LOVE IT! I don't have a double broiler so I used a pyrex bowl over simmering water in a pan. Make sure the water doesn't touch the bowl. Anyway, great little trick for a double broiler substitute I see others have done too.

Chocolate Zucchini Cake III

Yum! Very easy to make, incredibly moist. It could have been a tad bit sweeter for my buds but that's a simple fix. I used a bundt pan, it looked beautiful. I topped with Satiny Chocolate Glaze the first time but tried Hard Chocolate Glaze the second time. I totally prefer the Hard Chocolate Glaze, not too sweet but very rich!

Chocolate Chip Cake Bars

Very easy, very good, very rich! This is my new cookie bar recipe for good. I would recommend serving in small pieces. It's versatile so you can add or omit whatever you like in terms of nuts and chocolate chips. I myself omitted the nuts and added half chocolate chips and half plain M&M's. I was very short on time so I also skipped the glaze even though it looked delicious. Thanks for sharing this recipe!

Soft Molasses Cookies V

I love how soft these cookies are!!!! I agree that this recipe lacks taste. I will certainly make again, but add more spices as other suggested. Then it would be a five star cookie. VERY SOFT! PERFECTO on consistency!

No Bake Chocolate Oat Bars

I did the recipe exactly how it is listed and didn't listen to the other reviews...mistake. WAY too much butter. I should have listened! I would cut the butter in half at least. As it was, there was a lot of butter sitting in the pan after scooping the oatmeal out. Will try again with modifications though.

Sugar Cookie Icing

I thought this was not a good flavor. Is there such a thing as bad confectioners sugar? It wasn't an old package but the taste was pretty awful. That and there is no way 2 tsps of milk was enough. Had to double to 4 to get any kind of liquid going. I'll give it two stars only because it did get hard but still looked wet. I added little designs to my chocolate covered sugar cookies. This alone on the cookie would not have been good.

Blackberry Cobbler II

Mmmmm! Picked blackberries from a local farm and was clueless what to do with them. Glad I found this recipe. I read a lot of other suggestions and this is what I did: (1) doubled dough mixture but stuck to only 1/2 cup sugar. (2) Only added 1/2 cup sugar to berry mixture as my berries were very ripe (3) Didn't have iron skillet, boiled berry mixture in saucepan, poured in a 9X12 baking dish then plopped the dough mixture on top by teaspoon full. I really like this recipe because you can't go wrong with it! I'm anxious to try different fruits. Excellent!

The Best Lemon Bars

Fantastic! Yum! My 12 year old son declared these lemon bars his favorite dessert. I've never made lemon bars before, never really thought to, but I had extra lemons so I tried this recipe, a new favorite I will go back to again and again. I too added about 2/3 cup fresh lemon juice and added a little extra flour to compensate.

Cream Cheese Pound Cake III

Very simple recipe, I love it! I made sure the cream cheese, butter and eggs were at room temperature. Mixed them well. I didn't have cake flour so I found a recipe for cake flour substitute, it involved a lot of sifting. I have no idea if it was worth it. I baked for 1hr10min but will try a tad less next time. The outside was golden brown and was probably the best part of the cake! But I felt the inside was just a tad too overdone. I will make this recipe again, but will try it with actual cake flour and will decrease the sugar by half a cup. I will still try another version after that until it's perfect to my taste. GREAT BASE RECIPE THOUGH!!!

Pizza Casserole

My family raved about this dish. The egg noodles add crust-like flavor. I added more cheese than it calls for and used not only mozzarella but cheddar as well. I also added olives and mushrooms. That's what's so great about this recipe, you can add nearly whatever you would put on a pizza...to your liking! Fantastic recipe submission Melissa!

Mom's Chocolate Chip Cookies

Excellent! I like to shake things up with cookies a bit. I made it with semi sweet/white choco morsels. And because I love peanuty butter I added about 2tbsp of peanut butter (and added a tiny bit more flour to balance). I also used chocolate pudding instead of vanilla. Love them! They are just a bit crispy on the edges and gooey on the insides perhaps because of my modifications.

Excellent! I would give five but I had to add spices to make it perfect. Great starter though. I love the sour cream in it, certainly couldn't skimp on that for it makes the recipe what it is. Thanks for this awesome recipe!

Quiche Lorraine I

First time making quiche and it came out great! I used a ready made crust and it came out just fine. I added one extra egg per other suggestions but it gave me a little too much mixture, no big deal though. I mixed swiss, cheddar and some parmesean cheese and put in 8 slices of bacon. It was so good and it set perfectly! I did cook for an extra five minutes. I will definetly make this again!
