Yum! I've made this twice now, the first time it didn't come out quite right. The second time I did things a little different from the recipe and per other suggestions: 1) Let the raisins soak for about 10 minutes in water. This made them so moist to bite into. 2) After using my mixer for wet ingredients I hand mixed in dry ingredients, oats, and raisins. I keep reading over and over that over mixing some cookies and cakes makes them tough/hard. 3) I also added about an extra 1/4 tsp of pumpkin pie spice. Just a personal preference. 4) I use the small cookie scooper and pack it in there, when it wasn't, the butter melted too quickly and they became thin and crumbly. A cookie scooper is a must for just about all cookies in my book! Makes for a uniform and evenly baked batch. 5) I baked for only 8 minutes. The cookies came out perfect when the edges started to brown but the center looked gooey, almost raw.
This is now my go to oatmeal raisin recipe!
