Creamy Au Gratin Potatoes

I make this recipe often, only changing a couple of things. I much prefer diced onion to the large rings. I also use SHARP cheddar cheese instead of regular cheddar. I do not like sharp cheddar cheese plain but once cooked into the sauce it doesn't have a sharp flavor. The regular cheddar cheese makes a sort of bland tasting dish...still good, but sort of bland. The sharp cheddar is a definite improvement! This is also excellent with left over diced ham in it.
