Ground Beef Pie

I cannot believe anyone thought this recipe might be good. I looked at it and thought it might be bland so I added some garlic, salt, pepper to he ground beef while cooking it and then added ground mustard to the egg mixture and it still was completely blah and dull. I do not normally give reviews unless I really like something but based on how bad this was, I didn't want other people to be "fooled" into making it like I was; completely disappointing and a waste of time.

Okra, Chicken and Rice Casserole

As it is, I am not sure how this recipe cooks all the way through in the time allowed. I made chicken and rice my way (one can french onion soup, one can cream of mushroom soup, one can water and one cup rice) and added fresh okra to the mix. Then put the chicken pieces on top and bake UNCOVERED for 1 hour at 350 degrees or until chicken juices run clear. Like this, it was very good. The okra doesn't add a ton of flavor but it does add an extra helping of vegetables to an already good dish!

Grandma Oma's Pickled Okra

These were easy and fast and a great way to save summer okra. The only thing I did differently was add one whole clove of garlic but they came out fabulous!

Eggplant Sandwiches

Eggplant Tomato Salad

The prep time on this recipe is especially long but definitely worth it with the finished product! Full of flavor, everything about it was great. The only thing I did differently was added some grilled chicken breast directly to the sauce as it was cooking and served it over ziti. Could make and freeze if you have summer tomatos and eggplant that you want to do something with rather than regular canning! Fabulous!

Italian Chicken with Garlic and Lemon

This was so good! We had chicken and potatoes and I wasn't sure what to cook and this was perfect. The potatoes, in particular, were great, cooked well and full of flavor. I have made this twice now; the second time I added italian dressing to the liquid mix instead of red wine vinegar. Definitely one of our new favorite dinners!

Yellow Squash Casserole

Summer Squash Pizza Crust

As long as you squeeze as much water out of the squash as possible, this crust cooks evenly and perfectly. You do have to be sure to cook it for as long as directions say; it does get pretty brown but that's OK! I added about 1/4 cup extra flour (by accident) but it seemed to help. And my husband said this was the best pizza crust he ever ate!
