Easy Company Chicken

Pollo Fajitas

Yummy! I doubled the amount of marinade, and cooked the chicken in the sauce, so it was nice and juicy. Great combination of spices.

I usually like combinations of flavors like thi, but this just didn't work for me. Best to eat immediately after making; it doesn't keep well at all, even a day.

The Best Banana Bread

Delish...I used it on banana cake. I like that it's chocolatey and not overwhelmingly sweet. The ingredients didn't blend very well in the bowl, but it was still great.

A-Number-1 Banana Cake

Great flavor, and very easy to put together. I baked it in a bundt pan, and unfortunately didn't leave it in the oven long enough, so I ended up with a pudding center, so to speak. But the parts that got done were great. I'll definitely try it again, in the suggested pans next time.

Nice and moist, but not nearly chocolatey enough, even though I added chocolate chips to the batter. My family liked it, though; maybe just more cocoa powder next time.

Field Grade Spaghetti Sauce

I skipped the onion soup mix, and used a bottle of premade spaghetti sauce. It smelled heavenly while simmering, and the cinnamon added a unique sweetness that was excellent.

Chicken Curry I

This was my first attempt at curry, and I found it delicious! I used skinless, boneless chicken breasts, tomato sauce instead of paste, but otherwise followed the recipe exactly. Next time I'll throw some cauliflower in to simmer with the chicken. Yummy with a dollop of plain yogurt on the side!

Quinoa Tabbouleh

So delicious and simple! I used cilantro in place of parsley, and chopped the carrots instead of grating them, but otherwise followed the recipe exactly. This will become a new regular on my menu! This is my first experience with quinoa, and I'm looking forward to finding new ways to use it.
