Southwest Chicken

Reviewed: Oct. 18, 2012
Made this as written and it is good. I'm not a fan of 'southwest' foods but my husband loves it so I decided to make it. I'm glad I did because it was a nice change to what we normally have and he really loved this dish.

Mochiko Chicken

This came out great! I didn't add the salt just because of the fact that soy sauce is plenty salty enough.

Pumpkin Muffins II

Reviewed: Oct. 18, 2012
Made the recipe as written except for using canned pumpkin. I used 2 1/2 cups of the canned pumpkin puree. The spices are good, but I think next time I will cut the cloves and allspice by 1/2. It made exactly 24 regular muffins. They are delicious and so moist!!! The second batch I made I added raisins to it. I did make a topping for the muffins and put it on them right before I put them into the oven. (1C flour, 1C instant oats, 1C brown sugar, 1/4tsp baking powder, 1/4tsp baking soda, 1/2tsp cinnamon, and 1/2 cup melted butter. Mix until it's crumbly and put onto unbaked muffins..) These are so good and the house smells amazing! Definitely feels like Autumn now

Angela's Awesome Enchiladas

Reviewed: Aug. 20, 2011
I'm personally not a fan of enchiladas but my hubby loves them so I figured I would attempt making some for him. I was really surprised at how good they were! My husband loved them and said they were some of the best he's ever had :) Thanks a bunch for the recipe!

Chicken Pot Pie I

Reviewed: Nov. 14, 2007
It turned out wonderful! I'm so glad that I tried it. Like a lot of people, I too altered it a tad bit. I seasoned the chicken with Season salt and Lemon Pepper, then I cooked it in the pan in a little olive oil until it was browned on both sides but still raw in the middle. When both sides were browned I filled the pan halfway with chicken broth and let it simmer (covered)until it was done. When it was done I let it rest while I prepared the veggies. I used frozen peas and a mixed veggies with corn, carrots, and asparagus. I put the veggies in the left over chicken broth to cook halfway through. Then I mixed everything together (2 cans of the soup, 2 TBS milk, 2 TBS of the left over broth from the veggies/chicken)
