Almond Meringue Cookies

I had the same problem with my Merengues not fluffing up until my mom (!) told me that letting the eggs warm up to room temperature (or close to it) makes all the difference. It works!

Fish Fillets with Stuffing

This was a great way to cook fish. I used tilapia, and I added some extra breadcrumbs plus a splash of white wine. I also baked this in the oven, in a covered glass dish at 400 for 20 minutes.

Sweet 'n' Spicy BBQ Sauce

This sauce rocks. Both of our kids have trouble with soy digestion, so it was nice to find a bbq sauce that doesn't contain soy at all. It's pretty obvious, but the cook time doesn't include the time to get the stuff to a boil. Also, learn from me, start with a pot that's at least 3.5 qt. I had to relocate the sauce from a 3qt pan to a 3.5 qt to give it some space.

Linguini with Vegetables

This makes for a lovely summer lunch! I added an extra red bell pepper, and had to use garlic powder instead of fresh garlic. I also decreased the pasta by half, and next time I will add even more vegetables. (I like to have at least 50/50 pasta/vegetables, if not more veg than pasta).

Scot Hibb's Killer Culinary Meal Loaf

I loved it! I halved the recipe because I only had one pound of ground beef. I, too, thought it seemed too moist before I baked it, so I added about a cup of breadcrumbs before baking. Deee-licious! I love recipes that have 'extenders' in them, for health and budget reasons. Thank you for sharing! This will be a regular in our rotation.

Filipino Ribs

These are delectable and fall right off the bone! The hint of anise adds an unexpectedly delicious flavor to these ribs. I made these for my Filipino husband and his brother and am waiting to see if they recognize any flavors; either way, they'll be a hit. Awesome recipe!!

Dill Gazpacho

I halved the recipe and substituted some lime juice because I didn't have enough lemon. It is wonderful! A great summer dish. I think next time I will use a yellow or red pepper, to preserve color in the liquid as another reviewer suggested. Thanks for sharing!

Heeyyy! ich habe dieses Rezept gerade ausprobiert und ich muss sagen: Ich bin begeistert! Niemals haben meine Geschmacksknospen eine solche Sinfonie von Geschmäckern und betörenden Zuckernoten genießen können! Es ist wirklich sehr gut Vergleichbar mit Marzipan, allerdings ohne die feine Nussnote. Vielleicht das neue Marzipan für Nussallergiker? Ich vergebe jedenfalls 5 Sternchen und kann es nur weiterempfehlen es selbst einmal auszuprobieren! Gerade das Zerstören von Dingen im eigenen Umkreis, verleiht dem Kochvorgang etwas zeremonielles. Ich habe bei mir unter Anderem einen Klappstuhl zertrümmert. Jetzt kann ich zwar nirgendwo mehr sitzen, aber wenigstens war das Essen lecker =)

Salsa Tuna Salad

I made this with mayo (no yogurt on hand), and threw in a diced stick of celery and some leftover onion. My salsa was a little mild, so I added some chili flakes. For some reason, I thought this also called for pasta ... I bet it would be good mixed in. Kudos for the tuna/salsa combo!!

Vegetarian Stuffed Bell Peppers

This was superb! I didn't peel the tomato, and I added a little extra. I used homemade breadcrumbs, and I also mixed the cheese in. I will definitely make this again, soon.

Curried Turkey

I made a substitution: turkey stock and powdered milk for milk and bouillon cubes. I used less than 1/4 c oil, too ... just a few tablespoons. I kicked it up with a little more curry powder (1 T total) and a sprinkle of garam masala. I agree that the flavors mix well with the turkey! I will definitely make this again.

Cool Veggie Pizza

I made this to use up some crescent dough we didn't use at Christmas. I made it with yogurt instead of mayo, topped with onion, green pepper, cilantro, and jalapeno (fresh vegetables I had on hand). Wonderful!

Mostaccioli with Green Beans and Tomatoes

This was a pretty good pasta. I like the idea of cooking green beans in with the pasta, an easy way to squeeze in an extra vegetable. This was great re-heated for lunch.

Peking Duck

Yes this was excellent and considerably easier than the traditional Peking duck recipe! We cleaned the bird off, and are planning to use the remainder for fried rice or some sort of duck soup. Using flour tortillas instead of Mandarin pancakes worked pretty well :D The one flaw I'd say is that the bird is still a little fatty. Perhaps this could be mitigated by making sure the cuts at the serving stage don't have much fat, but the yield is a bit less. All in all, though, if you aren't so concerned with maximizing the amount of meat/skin per duck then I'd say this is a suitably acceptable substitute. I'd say be sure to go very easy on the water when steaming too.

Pizza Crust for the Bread Machine II

Mine was more chewy than crispy. I served it with a Rachel Ray recipe for a white pizza with artichoke. Very rewarding! I modified the recipe by subbing olive oil for vegetable oil, about 1/2 c whole-wheat flour and the rest bread flour, honey instead of sugar, and vegetable broth instead of water. I also added some garlic-herb seasoning.

Garbanzo Tomato Pasta Soup

I made this the first time with store-bought, "Kitchen Basics" brand vegetable broth---a very salty, full-flavored broth----and it was scrumptious, delectable. I made it again with a weaker, home-made broth and it was just okay. If you want to make this yummy, use a full-flavored veggie broth!

Tomato Broccoli Bake

This delicious recipe lets a ripe garden tomato sing. I used a little less cheddar, and sprinkled a breadcrumb/parmesan topping on. When it said to boil the vegetables, I felt mine needed liquid so I added some chicken stock. It was still watery by bake time, so I baked with the cover off. Turned out perfect!
