Black Magic Cake

Reviewed: Oct. 10, 2013
This was a great chocolate cake. I have tried several with cocoa powder and was never happy. This one was great. I subbed melted butter for the oil, and also used a few melted ounces of super dark chocolate. It helped cool the butter down (Melted it in the butter) and gave a little extra oomph to the cake. I just happened to have it around, but I don't think next time I would make an extra trip to the store if I was going to make the cake. The cake is very rich, and buttercream is just too sweet. I decided to make a vanilla whipped cream for it instead, and stabilized it with a little powdered milk. I shaved a little bit more of the dark chocolate over the top of it. It was beautiful, and gone in less than a day. Will definitely make it again!

Amish White Bread

Reviewed: Apr. 3, 2013
I made this yesterday. It was easy to make and relatively quick. I used melted butter instead of oil, and did what others suggested and toned down the sugar to 4 tbsp. I only had one loaf pan, so I shaped half the dough into a mound, put a few slices on top, and put it on a cookie sheet with parchment paper. Both came out great. This bread really isn't great enough to eat by itself, but it is great with things, or butter/jam. It tastes much like a dinner roll you could get at a restaurant. It is missing a little something for it to stand all by itself. Slices well, and I will probably make again but with more sugar. Also, those of you with Kitchen Aid mixers, don't bother with it. This bread dough is too stiff and just climbs the hook. The job is better done with your hands.

Creamy Au Gratin Potatoes

Reviewed: Apr. 3, 2013
This recipe was easy enough to make. It started off like the base for homemade macaroni and cheese, which I made for Easter a few days ago. I omitted onions and used cream instead of milk, because that was what I had on hand. I also added about a cup more cheese. They came out wonderful, but there is no chance in heck I am getting the remnants out of my glass pyrex dish. I buttered it, but it's still stuck on pretty well. I recommend covering your dish with foil or getting something disposable. Also, the potatoes were done before the 1 1/2 mark.

Oatmeal Raisin Cookies I

Reviewed: Jan. 22, 2014
These were great, with some modifications. Soaking the raisins is a must! Added more cinnamon and some nutmeg. And smashed the dough after putting it on the pan. Also reduced both sugars to 1/2 cup each.

This is a great go-to cornbread recipe. I have added sautéed onions and jalapeños to it, too.

Key Lime Pie VII

Reviewed: Jan. 16, 2014
This key lime pie smelled like the destin diaper rash cream. The consistency was nice, but I couldn't get past the smell. I even made homemade crust and homemade whipped cream to top it with. I was really let down. My dad was the only one who would even touch it. I did check that all of my ingredients weren't expired.

French Bread

Reviewed: Apr. 11, 2013
I added some 4 tbsp of sugar and proofed my yeast. I also added about 1/2 tsp extra salt as others suggested. GREAT bread. Will definitely make again.
