Blueberry Dump Cake

Reviewed: Oct. 6, 2012
Great cake. I used frozen berries and a spice cake. Like others, I did not melt my butter first but I did use a spray "butter" to fill in the spots that the cube slices did not cover. Next I want to try it with the lemon cake.

The only thing that I added was some fresh blanched broccolli from my garden. Delicious recipe, I will make it often.

Don't change a thing, this is delicious just the way it is. I used frozen blueberries from last fall. I can't wait till there are more ripe again this year now.

I only had 1 can of apple pie filling so I mixed it with a can of cherry pie filling. Excellent! Everyone at the party wanted the recipe. Goes great with ice cream also.

Scalloped Potatoes and Onions

Reviewed: Dec. 23, 2011
We make this often, it is excellent. We do add some meat, ham or kilbaska sausage, and some cheddar cheese on top. We uncover it 1/2 hour before done to allow the cheese to get a nice color to it.

Easy Mexican Fried Chicken

Reviewed: Jul. 25, 2007
Great concept! I made this with Chicken Thighs. I marinated overnight like stated, then dredged in the flour/seasoning mix but I did more of a deep fried chicken (1/2 in oil in skillet) until golden brown then put in a 350 degree oven for 45 minutes. This is how I do all of my chicken to allow the fat to drain out. It was very moist and delicious. I will make this often.

Turkey Enchiladas

Reviewed: Nov. 25, 2006
I made really only one change, I added 8 oz. of cream cheese and 3/4 cup sour cream to the turkey mixture. I used a 29 oz, can of sauce (some on the bottom of pan) and it was enough to cover everything. It was okay, but I went from a little leftover turkey to a pan of enchiladas.

Leftover Special Casserole

Reviewed: Dec. 5, 2005
Because the reviews said that this was kind of bland, I added pepper jack cheese and used leftover pork roast. I also used small shell pasta. I will make it again, maybe next time with smoked salmon. Also top with french fried onions for an added zest.

Sensational Salmon Loaf

Reviewed: Nov. 22, 2005
Being from Alaska, I used my own canned Copper River Red Salmon in this recipe, it was great. The only thing I added was in the last 15 minutes I topped it with french fried onions and shredded cheddar cheese. This complimented the flavor very nicely with the crunch.

This was a good recipe. I did not have the time to cook it in the crock pot so I cooked it on the stove for an hour. I will make this again, maybe with the caraway seed.
