Fresh Pumpkin Pie

This was so delicious! Everyone loved it at Thanksgiving and said it tasted like real pumpkin. A couple of notes: I upped the spices. I used 1 t cinnamon, 1 t nutmeg, and 1 t fresh grated ginger. I also shorted the honey a little and added a couple T real maple syrup and a splash of black molasses. I followed the recipe exactly otherwise, and yielded enough to make an 11-inch pie. Also, I followed the advice in WILSONWIFE's review (thank you!) and roasted the pumpkin whole the night before. It was so easy to work with and cooked perfectly!

Aunt Norma's Rhubarb Muffins

This was my first time making muffins. Great recipe! I couldn't find rhubarb so I used cut strawberries instead. I added 1/2 cup of oats to soak up the extra juiciness, and it worked out perfectly! I also threw a little ginger and cinnamon into the batter and used the same spices and some more chopped walnuts instead of sugar on the topping. With the strawberries, it was sweet enough.

Three Animal Italian Meatballs

This was a great basis for the meatballs I was hoping to make. I added 3 cloves of garlic and some shallots, italian parsley, oregano (all minced) along with a little salt, pepper, and olive oil. I also omitted the oats and substituted with 1/4 cup more bread crumbs and 1/4 cup grated parmesan cheese. The texture was awesome, and the flavors came out just the way I'd hoped.

Lobster Bisque

My housemates and I loved this soup, although I doctored it a lot. I used corn flour (one roommate has a wheat allergy) which worked nicely. I followed some other tips and added garlic with the onions, used some heavy cream (1/2 c) instead of all milk, and added 3 T tomato paste. I didn't have worcestershire, so I added thyme, black pepper and 1 T of cooking sherry. I also threw in some corn and avocado just because. It turned out wonderfully and I would recommend any or all of the changes I made.

Cowboy Oatmeal Cookies

Fantastic cookies! I made some changes and they still turned out great -- I substituted butter for margarine and used white spelt flour (my roommate is allergic to wheat). I also used raw sugar instead of white, and in place of brown sugar I used a second cup of raw sugar and two tablespoons of molasses. I haven't tried the original, but I would recommend these modifications for a more organic cookie.

Lamb Chops with Balsamic Reduction

Such unique flavors, surpisingly easy to make. A wonderful dish! One note: I used a pricy, aged Modena Balsamic. With a lower quality vinegar the sauce may have been overwhelming.

Southern Living magazine's Blackberry Cobbler

I used 1.5x the ingredients and put it in an 8x11 pan -- it was beautiful and tasted delicious! I agree with some of the other reviews that a bit more crust would be enjoyable, but I would recommend this recipe either way.

Chicken Newburg

This was amazingly easy! I will steal components of this recipe for other things -- the sauce was so creamy but not too rich. I served it over rice instead of toast, which I think cut the flavor too much. I would add more seasoning next time if I used rice again.

Chicken Shepherd's Pie

Very good!! A great use for leftover mashed potatoes. I simmered the chicken with the spices in chicken broth and red wine so that the flavors really soaked in -- this also made the pie extra juicy, which I liked.

I keep coming back to this one over and over -- its perfect and everbody loves it! I go heavy on the parmesan cheese and skip the butter dollop -- a little give and take.

Meat and Potato Casserole

I substituted red peppers for green and made the salad dressing myself with lots and lots of garlic. I also melted a little provolone cheese on it at the very end. It was rich, but really good!
