Awesome Eggplant Rollatine

Loved it! Made this recipe for the first time tonight and it was a big hit with my five year old :). The only thing I did different was I added fresh basil to the spinach mixture! Thank you for sharing this recipe!

Puff Pastry Salmon

This recipe is great! I made these into appetizer portions for our thanksgiving feast. I did like what other reviewers suggested and sautéed in butter and olive oil a mixture of very well drained thawed frozen spinach, mushrooms, and garlic. I brushed the a little egg wash on too before putting them into a 400 degree oven for about 35 minutes. The puff pastry came out golden brown and The salmon was deliciously moist and flavorful!! Thank you for sharing!!

Slow Cooker Barbequed Beef Ribs

Delicious. Made it 2 days in a row! Yesterday, I pretty much followed the recipe, except I didn't have vinegar so I substituted it with apple juice. Today, instead of 2 lbs. I made 5 lbs. using the same measurements. There was plenty of sauce and the beef ribs were fantastic. My husband, his brother, and mother all loved it! Thank you!

Potato and Bacon Salad

Great simple recipe! I used one less egg and chopped them all into the mix. I also crumbled all the bacons into the salad. The bacon made such a big difference! It was delicious!

Corn Casserole III

Made it tonight for dinner and it was a big hit! Even my mother-in-law had seconds. The only thing I would do differently is use half the butter next time. And maybe it was my oven, but I had to bake it for an extra 15 minutes to get a little bit of the brown crust. Great recipe. Thank you for sharing!
