Waffles I

I never made homemade waffles so I took the advice of other reviewers and doubled the sugar and vanilla, added 1/2 tsp of cinnamon, and added just a little under 1/2c of veg oil. I didn't do anything fancy with the eggs, just followed the recipe exactly. Thank you!

Guacamole

First time guac maker and this was very good. I thought it was a bit salty as written, and I followed it exactly. I added one more avocado and then it was perfect. I used cherry tomatoes quartered instead of roma and 1/2 of a red onion.

Slow Cooker Pulled Pork

Used a 4.25lb boneless pork shoulder, slightly trimmed of fat. Cooked 10 hours on low in 2 cans of Dr. Pepper, flipping halfway through. Drained, removed fat, shredded, and dumped a bottle of Sweet Baby Ray's in and cooked on low for another hour. Served 5 hungry ladies (sliders, 2 per person) with 4-5 servings for leftovers! Perfect, easy, foolproof.

Jamie's Sweet and Easy Corn on the Cob

I couldn't taste a difference, maybe the corn I buy is already very sweet! BUT...my boyfriend said he could taste a subtle difference and really, really liked it. I'll definitely try this again!

Balsamic-Glazed Salmon Fillets

Very easy. We all have these ingredients on hand so it's perfect for when the salmon looks good at the store! I let the salmon marinade for 20-25 minutes. I didn't have any white wine so I left it out and I eyeballed the other ingredients. I doubled the honey due to preference. Served it with sautéed veggies for a healthy midweek dinner!

Asian Marinated Pork Chops

For the marinade, I used fresh ginger salad dressing instead of ginger, ground garlic (because I was out of fresh), and used Sriracha and cayenne because I like it spicy. Marinaded for an hour turning halfway through. I baked 4 1-inch thick boneless pork chops in a baking dish at 350 for 40 minutes (turning at the halfway mark), and they were perfect. I too was worried about the saltiness even with low-sodium soy sauce, but I think baking them mellowed out the saltiness so many people have talked about. I took out the chops, added a little corn starch to the remaining liquid and put it back in the oven for 5ish minutes to thicken. Very tasty! Thank you :-)

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This was one of the best things I've ever made. Superfood salad is an understatement! I added only 1/2 tsp of salt to the dressing per the previous reviews and added some honey. Cooked the quinoa in chicken broth and steamed the kale 1 min over the pot of quinoa to save a step! Added red onion, red pepper, a whole avocado, and halved cherry tomatoes. No cucumber or feta. To make it a full meal for us omnivores, I grilled some chicken breasts (little salt, pepper, garlic powder, and cayenne). DELICIOUS! Lots of prep though.

Pumpkin Chocolate Chip Cookies III

As is, I give it 4 stars because it needs a little sprucing up with spices! I eyeballed 1T cinnamon, 1T pumpkin pie spice, 1/2t each allspice, ginger, and nutmeg. Tasted the batter and determined it amazing so didn't add anything else. Per recommendations, I baked at 365 for 12-14 mins depending on size of cookie. These are cakey and extremely good. Thanks!
