Pumpkin Chocolate Chip Cookies III
As is, I give it 4 stars because it needs a little sprucing up with spices! I eyeballed 1T cinnamon, 1T pumpkin pie spice, 1/2t each allspice, ginger, and nutmeg. Tasted the batter and determined it amazing so didn't add anything else. Per recommendations, I baked at 365 for 12-14 mins depending on size of cookie. These are cakey and extremely good. Thanks!

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette
This was one of the best things I've ever made. Superfood salad is an understatement! I added only 1/2 tsp of salt to the dressing per the previous reviews and added some honey. Cooked the quinoa in chicken broth and steamed the kale 1 min over the pot of quinoa to save a step! Added red onion, red pepper, a whole avocado, and halved cherry tomatoes. No cucumber or feta. To make it a full meal for us omnivores, I grilled some chicken breasts (little salt, pepper, garlic powder, and cayenne). DELICIOUS! Lots of prep though.

Asian Marinated Pork Chops
For the marinade, I used fresh ginger salad dressing instead of ginger, ground garlic (because I was out of fresh), and used Sriracha and cayenne because I like it spicy. Marinaded for an hour turning halfway through. I baked 4 1-inch thick boneless pork chops in a baking dish at 350 for 40 minutes (turning at the halfway mark), and they were perfect. I too was worried about the saltiness even with low-sodium soy sauce, but I think baking them mellowed out the saltiness so many people have talked about. I took out the chops, added a little corn starch to the remaining liquid and put it back in the oven for 5ish minutes to thicken. Very tasty! Thank you :-)
