Secret Sauce Chicken

Easy and tasty. I decreased the ingredients to marinate 1 lb of chicken thighs: 1/2 cup italian dressing, 1 tbsp worcestershire, 2 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp minced garlic and 1 tsp minced ginger.

Irresistible Double Chocolate Muffins

surprisingly good! i substituted flax with whole wheat flour and added some extra chocolate chips. the recipe made about 1.5 dozen, which baked in about 18-20 minutes. the texture is grittier than a regular chocolate muffin of course, but this is a great substitute when a chocolate crazing hits! my toddler enjoyed these as well. next time i'll try mashed banana instead of pumpkin.

Romanian Apple Cake

I was surprised how well this turned out! Definitely tastes better the next day -- just cover after it cools from the oven. I used only 1/2 cup of sugar and upped the spices (cinnamon, cloves, nutmeg) and cut the apples into 1/2 inch wedges as 1 inch seems huge. I also tried adding a middle streusal layer (of blended pecans, brown sugar and butter like a coffee cake topping) instead of the walnuts, and this was a big hit.

Maple Walnut Pumpkin Pie

I made a graham crust and baked it with the pie. The outer edge totally burnt on the high heat in less than 10 minutes! I just left it in the oven, then scraped it off when I added the crumble topping. Thankfully the crumble made the topping look all fancy so the missing crust edge wasn't a problem in the end. And it tasted fantastic!

wow! chewy and delicious. i used less sugar (2 cups), unsweetened coconut, and 4 eggs instead of 5 based on reviews -- not sure how this changes the texture compared to the original recipe. soooo good!

Sweet Potato Casserole II

Excellent -- this dish got loads of compliments at Thanksgiving dinner! I agree with other suggestions to cut down the white sugar. I'd start with a couple of tablespoons and just add gradually to taste, especially since the topping is very sweet.

Death by Chocolate Mousse

Made this for a fundraiser and got rave reviews. Followed another reviewer's tip to add 1 tsp. instant coffee to deepen the flavor even more. Skipped the oreo crust and used a ziploc bag to pipe the mousse into dessert cups (1 recipe makes 12 small portions). Let them set overnight, then topped with whipped cream and mint shortbread leaves just before serving.

Chewy Coconut Cookies

really tasty! be careful not to overbake otherwise they lose their chewiness -- take them off the baking tray while they're still a little gooey in the middle. i think these cookies would be even more excellent with some white chocolate chips.
