Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

tried this as a christmas side dish. takes some extra effort that i'm not sure is worth it. the potatoes kind of "dilute" that sweet yam flavor. i'd suggest adding brown sugar to taste before baking.

Soda Cracker Cookies

loved this!! so did everyone else who tried it. i followed the recipe times exactly (3 minutes boiling and 5-6 mintues in the oven) and they worked perfectly. just watch that the edges don't burn. i did line my baking pan with parchment paper -- no greasing, no cleaning!

delicious! based on previous reviews, i replaced the 2 teaspoons of cumin with 1 teaspoon each of cumin and coriander. i also used a handblender to puree the chutney used as the baste for the tenderloin.

Perfect Baked Jerk Chicken

Made this for a Caribbean potluck. Pretty tasty but a little too mild. Jerk chicken usually has habanero peppers in it so I'll probably add those next time.

Chewy Chocolate Chip Oatmeal Cookies

I made these with the suggested modifications (add 1/4 cup flour, 1/2 tsp baking soda and subtract 1/2 tsp salt) and refrigerated the balls of dough before baking. They came out fabulous -- crispy on the outside, soft and chewy on the inside.

Romanian Apple Cake

I was surprised how well this turned out! Definitely tastes better the next day -- just cover after it cools from the oven. I used only 1/2 cup of sugar and upped the spices (cinnamon, cloves, nutmeg) and cut the apples into 1/2 inch wedges as 1 inch seems huge. I also tried adding a middle streusal layer (of blended pecans, brown sugar and butter like a coffee cake topping) instead of the walnuts, and this was a big hit.

Sweet Potato Casserole II

Excellent -- this dish got loads of compliments at Thanksgiving dinner! I agree with other suggestions to cut down the white sugar. I'd start with a couple of tablespoons and just add gradually to taste, especially since the topping is very sweet.

Chocolate-Chocolate Chip Bacon Cookies

Everyone who tried these loved them. The bacon flavour is pretty subtle when the cookies are still warm but it gets a little more noticable once they cool down. I used 1 cup of crumbled bacon (it comes in bags by Hormel and Kirkland) and re-sauteed it down to about 3/4 cup of crispy bits.

really tasty! be careful not to overbake otherwise they lose their chewiness -- take them off the baking tray while they're still a little gooey in the middle. i think these cookies would be even more excellent with some white chocolate chips.

Secret Sauce Chicken

Easy and tasty. I decreased the ingredients to marinate 1 lb of chicken thighs: 1/2 cup italian dressing, 1 tbsp worcestershire, 2 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp minced garlic and 1 tsp minced ginger.

Death by Chocolate Mousse

Made this for a fundraiser and got rave reviews. Followed another reviewer's tip to add 1 tsp. instant coffee to deepen the flavor even more. Skipped the oreo crust and used a ziploc bag to pipe the mousse into dessert cups (1 recipe makes 12 small portions). Let them set overnight, then topped with whipped cream and mint shortbread leaves just before serving.
