I love to bake! Bread, cookies, cakes, etc. I also like to focus on making recipes diet friendly and good tasting!

Christmas cookies! I normally bake over 10 different kinds of cookies each season.
My cooking triumphs
pralines as good as the ones we get down south! Being hired to make over 20 lbs of christmas cookies for a company's gift. Having one of my original recipes published in a Taste of Home Cookbook. Becoming an AR Allstar!

Cilantro Garlic Lime Sauteed Shrimp
This was so good. I made this in a pinch when I had some shrimp, but wasn't sure what to make with it. Very flavorful. Only wish I would have snapped a photo. No leftovers, so I'll have to take one next time!

Easy Chicken Veracruz
Wow...so easy and so much flavor!! I used plum tomatoes cut up, because I had no cherry tomatoes on hand and added a little garlic powder to the chicken before browning it with the salt and pepper. Do NOT skip the green olives and the capers! They "make" this dish spectacular! Served this with some fresh black pepper linguine for a fantastic meal! Thanks Occasional Cooker for a great recipe!!

Ginger Banana Bread
Very nice banana bread. I admit, because of the name, I added more ginger (I love ginger.) I added 1/2 tsp. instead of 1/4th tsp. and also added some crystallized ginger to the batter. My bananas were quite ripe and sweet, so I used a little less sugar than called for.
