Somewhere I read that putting these on a wire rack worked better. I tried that and WOW! Much better for the way I like chips. I don't like some soggy and some crispy -- I want them ALL crispy! I put the parchment paper over a deep-dish broiler and then the wire rack over that to ensure clean-up was a breeze. When using the wire rack -- they're a little more difficult to remove if they're very curly leaves! I also prefer the green kale because the red is even more bitter. However, the red kale is a tad bit better for you than even the green. Since I like mine crispy, I left them in for 15 minutes at 350. Worked like a charm! Whoever wrote that they need to be eaten the same day is correct though -- they're definitely better the first day.
