Corned Beef Waffles

My husband and I really enjoyed these and my kids (5 years and 18 months) loved them. Definitely will make again as an alternative to regular waffles or pancakes.

Traditional English Muffins

Another instance where one realizes the taste difference between store-bought and homemade. These were really good. They take a lot of time, but if you take it on as a fun project, it is worth it. I made 36 with the recipe as described and followed all the tips offered, including the multiple risings, as well as reducing the honey, adding cornmeal to both sides, and "smashing down" after the first 7-8 minutes in the oven. I'll definitely freeze these and use them for breakfast all week for the family.

Boilermaker Tailgate Chili

Great recipe - complex flavors. Too spicy for our taste, though. Left out the jalapeno and 1/2 tsp of the cayenne pepper and it still made me sweat when I ate it. Otherwise, kept all the ingredients the same and we really enjoyed it. I didn't think it was too many ingredients - most of the ingredients are just teaspoons of spices from the spice cupboard that you typically already have on hand. We'll make it again!

Real Chiles Rellenos

Wow, these are really good. I made it just as instructed, except that I didn't have Mexican-style stewed tomatoes or Mexican oregano, so just used plain canned tomatoes and plain oregano. I also had Chihuahua cheese in the fridge so just used that instead of all the other cheeses. I thought these were amazing, but my husband thought they were too spicy. It was tricky doing the coating and frying - that'll take practice, but they were really delicious.

Great! Skipped the sumac powder and didn't try to replace it with anything. Bought pita bread "chips" at the store that were already pre-toasted. I used dried herbs instead of fresh -- used just 1/3 the listed fresh quantity. Was great and will make again.

Sesame Green Bean Salad

Didn't have apple cider vinegar so just used white vinegar. Also didn't have sesame seeds so skipped that. The flavor of this was delicate and not too strong. The kids really liked it, as did the adults. I'll make this again.

Broccoli Cheese Soup

Basically, proves the theory that any broccoli cheese soup that includes processed cheese spread (velveeta) as an ingredient is going to be good! Very tasty -- I used 1/2 turkey stock to replace 1/2 the chicken broth (trying to use it up), and added some white wine to the onions (though couldn't really appreciate that in the final product). Otherwise, made exactly as written. Great!

Strawberry Muffins

My kids and I liked these a lot. They are not meant to be a sweet, dessert-like muffin -- they are more scone-like in flavor and light-and-fluffy (at least mine were). I guess I always think the strawberries in strawberry muffins end up being a little mushy, so I was expecting that and it didn't bother me. We all loved these!

Crispy Fried Chicken

This was great! Still uncertain about how to do seasoning. Did the 2 cups flour, 1 tsp paprika, 1/2 tsp pepper, 1 tsp salt and a bit underseasoned, but not sure where to go from here. Will experiment -- technique was perfect, though - and quick! I only let it sit for 5 minutes before frying and crispiness was perfect!
