Light Cinnamon Coffee Cake

Made the adjustments others made - 1 tsp vanilla, 1 egg instead of egg substitute, all white flour instead of wheat. I doubled the topping and made this in a bundt pan (baked for a total of 40 minutes). The kids loved it.

Sweet-Sour Broccoli Salad

I've tried other versions of this with white wine vinegar instead of cider vinegar and thought the cider vinegar in this was a little strong. It was alot of dressing for the amount of broccoli -- I'd half it next time.

Corned Beef Waffles

My husband and I really enjoyed these and my kids (5 years and 18 months) loved them. Definitely will make again as an alternative to regular waffles or pancakes.

Traditional English Muffins

Another instance where one realizes the taste difference between store-bought and homemade. These were really good. They take a lot of time, but if you take it on as a fun project, it is worth it. I made 36 with the recipe as described and followed all the tips offered, including the multiple risings, as well as reducing the honey, adding cornmeal to both sides, and "smashing down" after the first 7-8 minutes in the oven. I'll definitely freeze these and use them for breakfast all week for the family.

Real Chiles Rellenos

Wow, these are really good. I made it just as instructed, except that I didn't have Mexican-style stewed tomatoes or Mexican oregano, so just used plain canned tomatoes and plain oregano. I also had Chihuahua cheese in the fridge so just used that instead of all the other cheeses. I thought these were amazing, but my husband thought they were too spicy. It was tricky doing the coating and frying - that'll take practice, but they were really delicious.

Great! Skipped the sumac powder and didn't try to replace it with anything. Bought pita bread "chips" at the store that were already pre-toasted. I used dried herbs instead of fresh -- used just 1/3 the listed fresh quantity. Was great and will make again.

Maple Zucchini Bread

Husband and kids all loved it. I didn't have wheat germ and used oatmeal instead. I could see how some would comment that it tasted like bad pancakes - I think if you had really high quality maple extract it would be particularly good (I just would have no idea where to get that) - maybe one could tray using real maple syrup?

Zucchini Coconut Loaf

This was great and the whole family liked it. I made a few modifications for our taste and healthfulness: cut the nutmeg in half, left out the nuts and berries, used 1/2 cup honey and no sugar, used 1/4 cup unsweetened applesauce and 1/4 cup oil, 1 cup white flour and 1/2 cup wheat flour, and 1.5x the zucchini. It was still plenty sweet and the texture was great! I baked at 325 instead of 350 because of the honey.

'Momma Made Em' Chicken and Sausage Gumbo

I loved this, though the rest of the family (3 kids and husband) not so enthusiastic. I loved the flavor. Actually didn't use the chicken. Used all fresh vegetables. Next time I might actually leave out the sausage - I thought it was great without it and don't need the calories.

Parsnip Pancakes

These were a hit - everyone liked them a lot. We ate them with sour cream, like regular potato latkes. Made these again and this time used two parsnips and 1 sweet potato and then were even tastier. Everyone liked them.

Grandma Johnson's Scones

I made into 4 rounds and cut each round into 4 to 6 triangles and they make plenty (I can't imagine how big they'd be if made in the way described). I didn't find that they spread that much. I didn't have any cream of tartar and so used 1/2 tsp of vinegar and it worked out well. I made one batch plain, one with fresh blueberries, one with fresh blackberries, and one with chocolate chips -- all were great. I put them in the oven for about 11 to 12 minutes and they were just right. Delicious, but very rich! Everyone in the family loved them!

Mashed Potato, Rutabaga, and Parsnip Casserole with Caramelized Onions

I liked this because it had a different flavor than plain mashed potatoes (which I think are boring), but the rest of the family did not like this! There is a huge pan of it left for me to eat on my own!

Cherry Pie IV

I used fresh sour cherries from the farmer's market, cut the sugar to 1 cup, and cut the almond extract. I used a Pillsbury pie crust. This was very good, but I think next time I'll cut the sugar even more -- it was very sweet!!

Orange Cream Cookie Mix

I received this as a gift and was afraid to try them after I read all these reviews! However, I actually thought they were pretty good. I did add an extra egg and a few tablespoons of water -- I had the same experience as others that the recipe as written results in a crumbly and dry dough. End result was good -- nice change from a typical cookie.

Spiced Pickled Beets

Loved this. Spices were just right. I used fresh beets (so therefore did not have any beet juice and added extra water instead) and it still turned out well. I also did not have apple cider vinegar on hand so used white wine vinegar instead. Very tasty!

Fresh Asparagus Soup

I make this often - love it. I use low fat soy milk and greek yogurt. I usually consider 2 "bundles" of asparagus to be equal to one pound.
