Broccoli Cheese Soup

Basically, proves the theory that any broccoli cheese soup that includes processed cheese spread (velveeta) as an ingredient is going to be good! Very tasty -- I used 1/2 turkey stock to replace 1/2 the chicken broth (trying to use it up), and added some white wine to the onions (though couldn't really appreciate that in the final product). Otherwise, made exactly as written. Great!

Turkey Enchiladas

I unfortunately did not think these were good -- they tasted like turkey with enchilada sauce on it -- which was not so appealing to me and my family. This may just be because we just don't like turkey very much and I should just accept that we're going to throw it out after Thanksgiving!

Sesame Green Bean Salad

Didn't have apple cider vinegar so just used white vinegar. Also didn't have sesame seeds so skipped that. The flavor of this was delicate and not too strong. The kids really liked it, as did the adults. I'll make this again.

Great! Skipped the sumac powder and didn't try to replace it with anything. Bought pita bread "chips" at the store that were already pre-toasted. I used dried herbs instead of fresh -- used just 1/3 the listed fresh quantity. Was great and will make again.

Apple Strudel Muffins

Chicken Tetrazzini for a Crowd

Used this recipe to use up some leftover Thanksgiving turkey. Adding cream of whatever soup and cheese makes anything tasty, so this was good. I also added in some asparagus. Didn't have pimentos so skipped those. Was very good!

Carrot Zucchini Bread

This was really not good. I doubled the sugar. My kids and I thought it was inedible, though the husband thought it was "fine". I suspect the way this recipe tastes must really depend on how your carrots taste, and I think carrots can vary quite a bit. The ones I used were apparently not good.

Peanut Butter Vegetable Chicken Soup

Used all natural peanut butter (without added sugar), doubled the chicken because I wanted to use it up. It was good - the kids ate it. But everyone agreed that we couldn't actually taste the peanut butter and it just tasted like regular chicken noodle soup. Was fine, nothing particularly unusual.

Real Chiles Rellenos

Wow, these are really good. I made it just as instructed, except that I didn't have Mexican-style stewed tomatoes or Mexican oregano, so just used plain canned tomatoes and plain oregano. I also had Chihuahua cheese in the fridge so just used that instead of all the other cheeses. I thought these were amazing, but my husband thought they were too spicy. It was tricky doing the coating and frying - that'll take practice, but they were really delicious.

Summer Squash Bread

Somehow I thought that summer squash would work exactly like zucchini and that this would essentially be just like zucchini bread - but it really was not. I guess I also have found that with zucchini bread, you can "play around" with the amount of zucchini and have a moister or less dense bread. This recipe felt less "forgiving" with the amount of summer squash. Like other reviewers, I thought it was somewhat dry. It also seemed to "dry out" sitting on the counter over the afternoon in a way that zucchini bread does not. All in all, interesting experiment with summer squash bread! I think I'll stick with zucchini, though!

Used red potatoes, added some Velveeta, used skim milk. Most of the family (11 yo, 2 yo, husband) really liked it (though 11yo thought too many onions). 7 yo didn't care for at all.

Boilermaker Tailgate Chili

Great recipe - complex flavors. Too spicy for our taste, though. Left out the jalapeno and 1/2 tsp of the cayenne pepper and it still made me sweat when I ate it. Otherwise, kept all the ingredients the same and we really enjoyed it. I didn't think it was too many ingredients - most of the ingredients are just teaspoons of spices from the spice cupboard that you typically already have on hand. We'll make it again!
