Mango Lassi II

Yummy! I thought it was perfect - maybe a little thick, but I'm sure if I had added more ice or allowed it to melt, it would have been more the consistency I expected. I also used greek yogurt, which probably made it thicker.

Magic Mango Bread

Hmmm. I think I'll try this again, pureeing the mango as others have said. It was good and I didn't have trouble with it rising, as others noted. I wonder if the rising issues have something to do with how acid the particular mangoes you use are.

Chocolate Zucchini Bread II

Hmmm. I'll stick with "Mom's Zucchini Bread" on this site - which I think is precisely the same recipe, but minus the cocoa. For some reason, the cocoa changes the consistency in a way that is just not great.

Cornbread Muffins I

These were great and easy to make. We like the little bits of corn -- I used fresh ears of corn, boiled until cooked, and then cut kernels off. I needed 2 ears of corn to make a cup of kernels. Like others said, they were sweet. We made mini muffins with this and each had 2 with our stew.

'Momma Made Em' Chicken and Sausage Gumbo

I loved this, though the rest of the family (3 kids and husband) not so enthusiastic. I loved the flavor. Actually didn't use the chicken. Used all fresh vegetables. Next time I might actually leave out the sausage - I thought it was great without it and don't need the calories.

Quick Gnocchi

Great recipe! I've actually never made 'real' gnocchi - only had the packaged stuff at this grocery store. This made me realize that if this is not as good as the 'real' recipe, I really ought to make the 'real' gnocchi next! Great!

Alyson's Broccoli Salad

I think next time I'll drop the sugar to just 1 tbsp - it is very sweet!! The caloric content of this is also pretty shocking. I think there is way too much sauce in relation to the broccoli, and so I always cut all the other ingredients in half, but still use all the broccoli in the recipe. I always cut the amount of back dramatically, or just use a few tablespoons of bacon bits. I also don't think it needs as many sunflower seeds. Obviously, it's the sunflower seeds, mayo, and bacon that really make the calorie content insane. If you cut the amounts of all of those dramatically, it's not quite as delicious, but still delicious enough -- and more in line with a reasonable caloric content in my opinion!

Wow - amazing! I think next time I might reduce the cloves just a tiny bit-- otherwise, great! I'm not sure how other people get the crinkles - I got very few crinkles!

Hot German Potato Salad III

I used brown russet potatoes and used just 2 (which was not enough - I couldn't figure out how to "convert" 9 red potatoes to big brown ones). Probably 4 would have been better. The kids actually loved this, though the 11 yo said it was a bit sweet (surprisingly). I cooked the bacon halfway in the microwave and then the rest of the way in a pan, so only used about half of the available drippings (presumably). All in all, really good and I'll make it again.

Peanut Butter Chocolate Chip Cookies from Heaven

These were just not very good. Akin to what other said -- texture was off in that they were dense, cake-like, oily, dry, and definitely not chewy nor crispy. The flavor was also sort of lacking, I thought. I used Peter Pan peanut butter and followed the recipe exactly. Wondered if I overmixed, but don't think so. Maybe I should have made them smaller and flatter - but it already made way more than 24 cookies.

Roasted Brussels Sprouts

Tomato, Cucumber and Red Onion Salad with Mint

Wow! I thought that a salad with mint in it would taste really odd- like a dessert. But, it was really tasty - the mint just adds a 'refreshing' taste to it, but doesn't taste truly "minty" to me. Everyone loved it, including the kids.

Graham Crackers

I will make these again --- I had to add even more than 1/2 cup of milk to make the dough pliable and not crumbly - not sure what was going on with that. Next time, I'll also roll them out thinner than I did (and they were already thinner than graham crackers when I rolled them, but then they rise and become as thick as sugar cookies). Must be VERY thin when rolled out. Nonetheless, these were very tasty and prove once again that for most things, homemade is better than store-bought!
