Garden Fresh Tomato Soup

I used fresh tomatoes from the farmer's market in season (August). It was good. I think I might go down on the cloves next time. I also did not add the salt, since I used chicken bouillon cubes and those already tend to be very salty.

Oatmeal Pancakes II

I have no idea what I did to these. They did not turn out well at all. At first they were very, very runny. I added a bit more flour and oatmeal. They ended up being very pasty and pretty tasteless. All of my ingredients were fresh and not expired. I'm not sure what the problem was...

Zucchini Coconut Loaf

This was great and the whole family liked it. I made a few modifications for our taste and healthfulness: cut the nutmeg in half, left out the nuts and berries, used 1/2 cup honey and no sugar, used 1/4 cup unsweetened applesauce and 1/4 cup oil, 1 cup white flour and 1/2 cup wheat flour, and 1.5x the zucchini. It was still plenty sweet and the texture was great! I baked at 325 instead of 350 because of the honey.

Blackened Salmon Fillets

Everyone loved this, but I think I must have had not had the equivalent of "4 filets" because it was way too much spice! Next time I'll just cut down the amount a bit. Delicious!

Cherry Pie IV

I used fresh sour cherries from the farmer's market, cut the sugar to 1 cup, and cut the almond extract. I used a Pillsbury pie crust. This was very good, but I think next time I'll cut the sugar even more -- it was very sweet!!

Oatmeal Chip Cookies

Old Fashioned Potato Salad

I liked the fact that this wasn't totally smothered in mayonnaise like the kind you usually get at the store. Next time I might leave out the eggs. I used dill relish and it seemed to turn out well - might try the sweet relish next time!

Strawberry Cinnamon Oatmeal Muffins

Definitely not a sweet, cupcake-y muffin. More like a somewhat healthy breakfast. Like others, I used brown sugar instead of white, half wheat flour/half white, 1 tsp cinnamon, and 1/4 cup plain Greek yogurt instead of the oil. I used 1 cup of finely chopped strawberries. These were good -- the kids liked them, and they freeze well. We'll eat them for breakfasts and pack them for school lunches. Thanks for the recipe!

Greek Pasta Salad I

Great! Could always use more veggies - I added cucumbers and double the tomatoes. Skipped the onions (kids don't like) and used salami instead of pepperoni. Very good!

Cinnamon-Raisin Coffee Cake

These were good. I only had greek yogurt on hand, and that worked just fine. My 3-year-old also enthusiastically but mistakenly added the topping to the batter itself. They were still tasty even with the topping mixed in. I also left out the raisins/dried fruit (just not in the mood) and walnuts (we're just not fans of nuts). Made them as muffins instead of in the pan, and they easily made 12 muffins (not just 9). Making it as described above, I calculate 221 calories per muffin - not too bad.

Mexican Bean Salad

Wow - so, I completely forgot the lemon and lime juice, and only had red bell peppers, and was missing the can of kidney beans, and only had dried cilantro -- and this was still amazing! Great recipe (I'll have to try it again next time using actually all the ingredients!). 6/24/12: Made this again (forgot I'd made it before) and even the 4-year-old loved it. Wow. Great recipe.

Super Moist Pumpkin Bread

Very good! I used 1 cup whole wheat flour, 1/2 cup ground flax seed, and 1.5 cups white flour. I cut the total amount of sugar in half. I used lite coconut milk. It was very moist and tasty!
