Spiced Pickled Beets

Loved this. Spices were just right. I used fresh beets (so therefore did not have any beet juice and added extra water instead) and it still turned out well. I also did not have apple cider vinegar on hand so used white wine vinegar instead. Very tasty!

Exquisite Pizza Sauce

I make this often - love it. I use low fat soy milk and greek yogurt. I usually consider 2 "bundles" of asparagus to be equal to one pound.

Peanut Butter Muffins

I used 1 cup of "real" peanut butter (fresh ground), added 2 Tbsp brown sugar and 1 Tbsp vanilla as others suggested, and about 1/2 cup milk chocolate chips. I also used about 1.5 cups whole wheat flour and 1/2 cup all purpose flour. I didn't add any toppings. Wow, these were the best peanut butter muffins I've ever had.

Cream of Fresh Asparagus Soup II

I really liked this, though I left out the sour cream and only used half the milk. Next time, I think I'll omit the salt - I used chicken bullion cubes instead of chicken broth so I think this made it saltier than it needed to be. Very good, though - will make again!

Lemon Blueberry Drop Scones

The kids liked these - I skipped the glaze because we didn't need them to be quite that sweet. I didn't have lemon yogurt but added lemon juice to plain greek yogurt. I'd make these again.

Quiche Lorraine II

Very good - everyone loved it. I used cheddar cheese as that was all I had on hand, and omitted the salt (I figured it would already be salty enough!). I did not pre-bake the pie crust. I put the cheese on the bottom and poured the egg mixture on top, which prevents the crust from getting soggy. I only give it 4 stars instead of 5 b/c next time I think I'll add some vegetables!

Cha Cha's White Chicken Chili

I actually used 8 ounces of medium salsa verde instead of the diced jalapeno and chopped green chiles because it was what I had on hand. Turned out great. I only used half the cayenne pepper and it was zippy but not overwhelming.

I liked this because it had a different flavor than plain mashed potatoes (which I think are boring), but the rest of the family did not like this! There is a huge pan of it left for me to eat on my own!

Awesome Sausage, Apple and Cranberry Stuffing

I used real cranberries because that was what I had on hand, and skipped the turkey liver. This was delicious! Everyone at Thanksgiving loved it.

Instead of putting chocolate chips in we put in 1 cup of M&Ms.We liked it this way .We also thought that we couldn't taste the peanut butter.We were a little surprised.I'm surprised that alot of other people thoght they tasted like peanut butter.

Baked Fried Eggplant

I made this as directed but after baking it for 45 minutes the eggplant was still firm and hard. The outside never turned crisp, either. I'm not sure what the issue is. Maybe the bottom line is that I like my eggplant relatively mushy! I won't make this again.

Pumpkin Whoopie Pies
