Monterey Spaghetti

Gluten-Free Chocolate Cake with Semi-Sweet Chocolate Icing

XANTHAN should be 1 1/2 TEASPOONS NOT TBSP! With that change the recipe is outstanding. My gluten eating family remembers this cake and just asked that I make it again. Very moist and delicious. I just made a simple buttercream for the frosting, because that's my favorite.

Soup For Couscous

This soup is fantastic. Even my kids will eat it! I have made it several times now, and we like it with red peppers instead of green, but it is terrific as written.

Vegetarian Gravy

Oh, my. So good. I used fresh sage (a couple of tablespoons) and added fresh parsley (3-4 tablespoons) and chopped my onions really fine. I used Better Than Bullion to make the veg broth. I also made this gluten-free by using sweet rice flour. I guess that has more thickening power than flour because I ended up having to add another cup or cup and a half of water to thin it back to the right consistency. I did not have the problem some people had with the oil separating, though. My non-veg, gluten-eating sister preferred this to her turkey gravy at Thanksgiving. I will definitely be making this again and again. Thanks for the recipe!

Potato Chowder Soup I

Really good soup! I did use veg broth instead of water. Very tasty as is and also good with a bit of thyme, sage, and old bay seasoning. I will definitely make this again!

Bread Machine Bagels

Fantastic flavor and texture! I doubled the recipe and made 12 bagels; they were the perfect size. My bread machine is tiny, so I used the stand mixer to knead the dough, cut it into 12 pieces and let it rest about 15-20minutes. Then I rolled the dough and pinched the ends (just because I wanted to) and let it rise about 30 minutes until the bagels looked puffy. Boiled closer to 2 minutes and since I wasn't putting any topping on I didn't use the egg wash. Baking time was a little less than the recipe called for in my oven. When I asked my son what he thought, he said "they're just...good!" - high praise, indeed!

Stuffed Green Peppers I

I made these for my husband - I have never liked stuffed peppers. They smelled so good that I had to taste - and I couldn't stop! Ate a whole pepper! Yummy - thanks so much for the recipe!
