Just baked yesterday and with half of it gone already, I plan on throwing another one together this afternoon. I substituted 1C whole grain spelt flour for 1C of the AP and added 1/3C milk with 1tsp organic apple cider vinegar, approximately 1/2C golden raisins, 1/3C raw sunflower/pumpkin seed mix, and 1/4C hemp hearts, and 1/2tsp baking powder - I wanted a healthier loaf but needed a base recipe to start from.
Baked at 350F for just under an hour and it came out perfect! Was careful not to over mix the batter which produced a wonderfully moist and relatively light banana bread.
