Carne Guisada III

Reviewed: Nov. 15, 2004
Perfect, I did not add any additional salt as I felt it had enough sodium.

Apple Butter Pork Loin

Reviewed: Dec. 7, 2004
Excellent!! I made one 1.5lb pork loin. I did not have any ground clove so I used nutmeg instead, I also used apple cider instead of apple juice. I added cut up fresh sweet potatoes to make it more of a complete meal. It came out really juicy and tender. It's not overly sweet. The recommended cooking time was way off mine was ready in less than 2 hours maybe because I only made one.

Habanero Hellfire Chili

Reviewed: Jan. 7, 2005
This chili is great!!! I made a few changes: I used 3 habanero, 3 serreno, and 3 jalapeno pepper. I omitted the chili paste because all I could find was chili sauce and I omitted the red pepper flakes. Other than that I followed the direction. After modifying the peppers this chili was good with a little kick. My kids including my 19 month old loved it. I put the peppers, onion, green pepper, and garlic in the food processor to cut down on prep time so it was very easy to make. The only change I would make next time is that I would add the whole tomatoes to the food processor too.

Sugar Coated Pecans

Reviewed: Jan. 8, 2005
This recipe was okay, I took the advice of others and beat the egg white until it was stiff, I also increased the cinnamon to 1 tsp and decreased the salt to 1/2 tsp. I made two batches 1 with vanilla and 1 without vanilla. Surprisingly the one without the vanilla tasted better. I was very surprised because I love vanilla.

Camp Cornbread

Reviewed: Jan. 8, 2005
I made this cornbread to serve with habanero hellfire chili also from this site and everyone really enjoyed especially the kids. The cornbread is very moist but crumbly. I made a couple of changes. I used an 8x8 pan so it had to bake for an additional 5 minutes or so. I did not have a can of cream corn so I took a can of regular corn, drained it and put it in the blender with a couple tablespoons of heavy cream and 1 tsp of sugar. The corn tasted much better than the can cream of corn, my 19 month could not get enough of it. Lastly I took the advise of others and reduced the sugar to 1/3 cup, it was still nice, chewy and sweet.

Restaurant-Style Potato Skins

Reviewed: Jan. 9, 2005
These are so good and I do not even like potato skins. They taste much better than TFIG's because you have the option of how much potato you want to leave and how much cheese and bacon to add. I can't wait for company to come over so I can make these as a great appetizer

Shrimp Scampi V

Reviewed: Jan. 11, 2005
This was a good base recipe but since it needed so much work I could not give it a higher rating. My family loved the scampi but I added 2 Tbsp of lemon juice, decreased the wine to 1/4 cup and added a swirl of olive oil. I also added 1/2 of bell seasoning (which gave it, its favoring, otherwise it would have been very bland)

Insanely Easy Vegetarian Chili

Reviewed: Jan. 24, 2005
This was good but I could not rate it 4 or 5 stars because it was not chili it was vegatable soup. It doesn't taste bad but its definitely not chili. I threw everything in the food processor to save time.

Japanese Chicken Wings

Reviewed: Feb. 24, 2005
These wings were perfect. The only change I made was that I fried the wings in a deep fryer and then I added 1 tbsp of melted butter to the sauce for the butter flavor. The though of frying chicken in 2 sticks of butter was a little scary for me plus butter burns so easily.

Cocktail Meatballs

Reviewed: Feb. 28, 2005
This was pretty good but I was expecting the meatballs to taste like the ones that people always serve at parties in the crockpot, they are good but just completely different than what I expected. I used heitz cocktail sauce since the recipe didn't specify.

Indian Chicken Curry I

Reviewed: Oct. 5, 2005
This was really good I increased the garlic and ginger and cut the chicken into bitesize pieces. After making this recipe the first time I learned a very valuable lesson. Get all of the spices at an Indian market. For example cardamom cost $12 at the grocery store and you only get a very small amount it cost a $2 at the Indian market and you get a whole bunch. I also added a couple of serranos peppers as I wanted it hotter!!!

Classic Spanish Sangria

Reviewed: Nov. 5, 2005
Yuck, maybe its my fault because I did not follow the recipe exactly instead I took the suggestions of many others and used blackberry merlot and spiced rum. I used tons of fruit and it still wasn't good. I personally think I went wrong by using spice rum instead of regular rum.

Beef Samosas

Reviewed: Nov. 7, 2005
I didn't have any green chilis (I used extra extra hot chili powder instead), cumin seeds, or ginger. I bought all of my spices at the Indian market they were each about a $1 each versus the grocery store which was charging $12 for cardamom alone. I also used spring roll wrappers instead of the phyllo dough as that is what the owners of the Indian market told me to use. These came out pretty good. I ended rolling them up as spring rolls but no one minded.

Crab Dip

Reviewed: Nov. 21, 2005
Very bland, however I will say that individuals who have never had fresh crab meat may like it but I'm from Maryland so I found the can crabmeat to be tasteless.

Apple Dumplings I

Reviewed: Dec. 21, 2005
I didn't like this but I can't blame the recipe as I read the reviews and made the following changes. I used pie crust instead of biscuits. I diced up the apples and coated them in a sugar cinnamon mixture. I used 1/2c white sugar and 1/2c brown sugar no water just a little bit of orange juice to get it to the right consistancy. I baked it for 20 minutes then I turned them and baked them for an additional 10 minutes before putting on the glaze. Then I baked them for 10 more minutes this was way too sweet and I love sweets. Perhaps if I would have followed the directions it may have came out better.

Husband's Delight

Reviewed: Dec. 21, 2005
I cut this recipe in half because I wasn't sure if it was going to taste good. The changes I made was adding grated parmeasan cheese to the cream cheese/sour cream mixture and I used spaghetti noodles instead of egg noodles. I also used barilla tomato and onion spaghetti sauce instead of diced tomatoes and onions It was quick and easy and the family loved it.
