Easy Garlic-Lemon Scallops

I made this for my husband and toddler tonight following the recipe almost exactly. I added a bunch of asparagus, mushrooms and a red pepper, so increased the sauce by 25%. I used a bag of frozen scallops (the littles ones) and served on penne. At first it was a little bland, but as the sauce soaked into the pasta it got better. My husband rated it a 4, but I don't think it will join our regular rotation of meals, it was still missing something (no pizazz) and that's alot of butter for one meal.

House Fried Rice

I followed the recipe almost exactly, only omitting the ham as I didn't have any. It turned out okay, good use of leftover rotissiere chicken, but I wouldn't make it for company. But I will make it again, maybe just tinker with it a little for personal taste.

Sesame Shrimp Stir-Fry

Really liked this recipe! It was very easy and has a great flavor. The only reason I didn't give it five stars is that it needs more sauce. Next time I'll just add more teriyaki sauce, and the cornstarch/chicken broth combo. This will definatly become a regular on our menu rotation!

Acorn Squash

I LOVE this recipe! I never liked squash until I tried it this way, and now it's one of my favorite side dishes. I do things a little differently though. I halve the squash, scoop out the middle, pierce many times with a knife or fork (especially around the top edge), add the sugar/margarine and bake at 400 for about 40min. While baking I take it out every 10-15min and 'baste' with the melted sugar/margarine sauce. With all the piercings, the sauce really gets into the flesh and makes it nice and soft. Next time I will try scooping it out and mashing it, that sounds yummy!

Chicken Enchiladas V

YUMMY! I made this for the first time and it turned out fantastic. My hubby isn't fond of really hot food, so I only used 3/4 of the can of chilis. I also added about 1/3cup of mild enchilada sauce. I stuffed 5 tortillas with the mixture and there was plenty of sauce. It did turn out a little mild though, after dinner my husband asked if I could make it spicer next time. I served it with Best Spanish Rice (also from this site). It was a tad on the rich side, next time I will serve on shredded lettuce and top with fresh tomatoes. My only complaint is that it took longer than expected to prepare. I put sliced chicken in with the onions and then when cooked removed it and shredded. This took longer than expected, I would want to have that ready ahead of time or plan for the extra time it takes. Also maybe with practice this wouldn't take so long to make.

Best Spanish Rice

So easy and so yummy! The only reason I didn't give 5 stars is it was a tad on the dry side, but we still loved it and it will become a regular dish for us.
