Mamaw's Chicken and Rice Casserole

I made this recipe exactly as it was written and found it to be a bit bland. My boys (ages 10 and 12) and my husband liked it OK but not enough for seconds. I really wanted to like this because it is so easy. When I reheated some for lunch the next day, I added garlic powder and it was MUCH better. So...I'll make it again but will definitely add garlic. I think I'll also try adding broccoli as someone else suggested and maybe cheese. It needs some color.

Sauteed Portobellos and Spinach

Loved this dish. I used fresh spinach...it was what I had on hand. I also added some green onion because it needed to be used and I used white wine instead of red. Will make it again.

Blue Cheese Cole Slaw

I've made this twice. Everyone likes it...even those of us who don't normally like blue cheese! I've had multiple request for the recipe. I didn't change anything except perhaps I added a bit mor cheese than the recipe calls for. This will definitely be a repeat summer recipe.

Pork Chops with Blue Cheese Gravy

I made this last night because I had some left over blue cheese and found this recipe that sounded interesting. I don't like blue cheese but this was actually very good. Hubby even raved and went back for more. I didn't have heavy cream so I browned a little flour in the butter, added some half and half and then the blue cheese. My 9 year old said "it wasn't too bad" and from him, that is a compliment. Great and easy.

Southern Pulled Pork

Not even close to tasty! I have had to load this up with barbeque sauce. And, unfortunately, I made it for a big crowd. Extremely disappointed.

Broiled Tilapia Parmesan

When hubby says "You should make this again!", it means it is good. And that is what he said. I didn't have any onion powder or celery salt so I just made it with out it and it was still delicious. Also didn't bother to flip it. So, so easy. Will make this again and again.

Chickpea and Tomato Soup

So it is the new year and I gained too much weight over the holidays. Found this healthy, low cal soup and decided to give it a try. I loved it! Great taste for something so easy. I used chicken broth instead of water & bouillon and added 1/4 tsp of crushed red pepper. Also threw in a little orzo. Even with the orzo, it was still very low cal. A great start to a new year.

Loved the combination of spices. It smelled GREAT. But we were disappointed in the taste. I blame this, however, on the chorizo that I used. I think the key here might be in using a really good sausage. Mine was rather bland. I will try it again using a different sausage.

Amy's Barbecue Chicken Salad

Very easy and very tasty. Replaced onions with pine nuts. The family loved it. Took it to a pot luck and it was a hit. Also used tyson frozen chicken breast rather than grilling myself. Call me lazy...

Potato, Ham, Broccoli and Cheese Soup with Baby Dumplings

I thought this recipe was very tasty though my children were not as thrilled. But then, if it's not Mac 'n cheese, they aren't likely to eat it. In an effort to hide the veggies, I pureed the carrots and broccolli (after steaming them). Other than that, I followed the recipe and I thought it was great especially for this cold winter night in sunny South Florida. (Yes, it was a record breaking 37 degrees!)

Waistline-Friendly Turkey Chili

My husband and I really enjoyed this chili. It has a nice smoky flavor thanks to the barbeque sauce and the chipotles. (I didn't have chipotle barbeques sauce so I used regular bbq and a tablespoon of chopped chopotle peppers.) I entered it into Weight Watchers to check the points...only 4 points per serving! It's very filling and well worth the many ingredients!
