Szechuan Spicy Eggplant

I am trying to lose a little weight and eating vegetarian more often so I was looking for an eggplant recipe. I omitted the shrimp and beef, cut the soy sauce to 2 tablespoons and added some peanuts and diced baby corn to make up for the missing meat. After sauteing the garlic, onions and ginger, this wonderful dish was done in ten minutes. There was absolutely no need to add a thickening agent. Yes, I did use chicken stock, but the orthodox could use veggie stock. This can be a master recipe for many combos of vegetables. If I were to make it with meat, I would use the shrimp and sub ground pork for the beef. Thanks for a keeper!

Hummus III

Better late than never! I had never even tasted hummus before so I thought it was time to give this a shot and the thing I like most about this site are the reviews where you get intelligent feedback from other readers to help you tweak a recipe. I knew I would prefer roasted garlic over fresh and after a preliminary tasting, I added some crushed red pepper flakes. My beta hummus came out delicious. This will be my new default snack for a least a couple months. Next time I will add a smidgen of cumin and a modest sprinkling of roasted red pepper. When I grill some fish or chicken I will add roasted pine nuts to my hummus and serve it in place of rice or potatoes. Thanks for this great new addition to my culinary repertoire!

Honey Oatmeal Bread II

This turned out amazing the first time although like many others, I had to increase the flour - by two cups. I doubled the yeast after reading the reviews. I also used half wheat and half bread flour. I substituted an egg wash for the topping. The honey measure was perfect, in the background, and not too sweet. This morning, I was wondering what sort of jam I should get to compliment this wonderful bread when toasted but I discovered, to my delight, that plain old butter was all I needed for a perfect light breakfast! Goodbye store bought bread!
