Leek and Cheese Quiche

I had great hopes for this recipe; unfortunately, I found that it presented many problems. First of all, only half of the leeks and cheese mixture fit into my deep-dish pie crust. Secondly, the recipe recommends seasoning with salt and pepper as the last step--this was a mistake, since the tomatoes soaked up all of the salt and made for a very unpleasant taste. And lastly, my quiche took twice as long to bake--and even then it was more like a soup. We threw the whole thing away and ate leftovers.

This is an AWESOMELY EVIL recipe. Just try and have some self-control when they're around. Three important changes. First, I never bring the peanut butter mixture to a boil (just heat until sugar dissolves), to keep the bars from getting too hard. Second, I double the topping. And third (and most important change), spread the topping on the bars and sprinkle with sea salt. Gotta go make another pan!

Butterscotch Bread Pudding

Amazing! I followed the advice from others and added raisins, cinnamon, a pinch of salt, and a splash of rum. I only used 1 cup of brown sugar, and thought the sweetness level was perfect. I melted some vanilla bean ice cream to use as a sauce.

Charleston Breakfast Casserole

I would give this recipe more than five stars. The only problem with it was it was too good, and I didn't have enough for latecomers to our brunch party! I doubled the recipe (and added four extra eggs, but only used two cups cheese). I substituted mushrooms for bacon, and it was great. I will make this again soon! Thanks!

Chocolate Chip Pumpkin Bread

I can't tell you how many times I've made this bread! So yummy and easy! I used 3/4 cup applesauce + 1/4 cup oil (instead of one cup oil) and it tastes even better! I only got two loaves from the recipe. This also makes great muffins. Thanks!

Curried Cashew, Pear, and Grape Salad

So yummy! This is going to become a regular in our house. I substituted Morningstar meatless bacon for the real stuff, since we're vegetarians--it worked well. Served with the Curried Butternut Squash and Pear Soup from this site.

Excellent. Used 16 oz two bags of frozen, pre-cooked butternut squash, and it worked perfectly. Served with the Curried Cashew, Pear and Grape recipe from Allrecipes.

Kyle's Favorite Beef Stew

Great recipe--got rave reviews from the family (even the kids ate it). Made a few noteworthy changes. First, we are vegetarians, so (gasp!) I subbed meatless beef strips for the real stuff, which worked surprisingly well. I used veggie broth instead of water. I didn't have time to cook in the slow cooker, so used the stove top. Stew was perfectly thick without adding additional water + cornstarch at the end. Totally delish and the house smelled amazing!

Grandmother's Oatmeal Cookies

Shepherd's Pie

This turned out great. I totally agree with the reviewer who suggested setting aside leftovers ahead of time, to avoid the very likely problem of having an empty pan. I made a few adjustments. First, I used seitan crumbles instead of beef (to make it vegetarian). Next, I followed some reviewers' suggestions to use a packet of onion soup mix (mixed with 1/2 cup water)--because of this, I only used one can of cream of mushroom soup. Instead of using canned veggies, I used fresh onions, celery, green beans and carrots. I didn't have mushrooms, so left them out. Yum!

Enchilada Casserole

Salmon Chowder

This was totally delicious. Adapted it based on wanting to use ingredients we already had. Used crab stock, fresh garlic and dill instead of dried, used only 1/2 cup cheddar cheese (that's all we had), used smoked salmon instead of fresh, blended two ears of fresh corn, and substituted a half can of coconut milk for the evaporated milk. Yum!

Blueberry Sauce

Um, based on the reviews from my kids, this recipe will be a staple in our house. My 7-year announced, "Even when I've been dead 1,000 years, I'll want more of this!" She may be a goofball, but I have to agree that this was awesome on homemade waffles from this site.

Kale and Quinoa Salad

OMG. I've made this twice already this week. What a great recipe! I followed the advice of other reviewers and massaged the kale w bit of salt for a few minutes. I used pine nuts and hazelnuts, because I didn't have pecans. Also substituted dried cherries for the currants and parmesan for the feta because it's what I had on-hand. Added quinoa a few minutes after it finished cooking to wilt the kale. Very flexible recipe for adjustments.
